The best milk to use is a naturally creamy milk, such as light canned coconut (not full-fat as this will be too thick), gluten-free oat milk, pea-based milk, or creamy cashew. The classic ratio of milk to eggs in French toast batter is ¼ liquid to 1 egg. For this vegan recipe, that means ¼ cup non-dairy milk per 1 tablespoon of chickpea flour.
Ingredient Variations & Substitutions
- Swap Cornstarch for Chickpea Flour: If you can't have legume-based flour, cornstarch can be used in place of chickpea flour, You can even use arrowroot starch to make this recipe corn-free.
