  • Gluten-Free Bread: Choose a gluten-free and vegan bread with wide, thick slices. My favorite to use is ALDI's liveGfree wide pan gluten-free bread is fantastic and allergy-free!
  • Non-Dairy Milk: Any unsweetened plain non-dairy milk will work just fine for this recipe. I tend to always use unsweetened light coconut milk since it's naturally thick and creamy! Feel free to use whatever you have on hand. A vanilla-flavored or sweetened variety would be delicious too!
  • Chickpea Flour: Part one of the secret custard-like slurry mixture that makes this eggless French toast better than even the "real" thing! Chickpea flour helps thicken the milk, adds a boost of protein like an egg would, and provides a subtle nutty/eggy flavor!
  • Nutritional Yeast: Part two of the secret eggless slurry! Nooch is the real MVP. Nutritional yeast gives your soaking slurry that umami, cheesy, nutty, rich flavor or "egg essence". This ingredient is key to achieving the perfect French toast flavor without eggs!
  • Granulated Sweetener: French toast, before adding any toppings, shouldn't be overly sweet. Just a pinch of sweetener or sugar is needed.
  • Cinnamon: Classic French toast MUST have cinnamon. Otherwise, you'd just be making some fried eggy toast, right?
  • Vanilla Extract: A splash of pure vanilla will tie the subtle sweetness and cinnamon together in one delicious morning bite!

The Best Bread For Gluten-Free French Toast

The best bread to use for gluten-free French toast needs to be thick to soak up the eggy mixture, wide to be big enough and satisfying to eat, crusty (dry) so you don't end up with sad soggy bread. Gluten-Free and vegan bread is few and far between, so my other recommendations besides ALDI's brand are Little Northern Bakehouse, some varieties of Ener-G or Food For Life, or New Grains Bakery vegan loaf!

Why Add Milk To The Eggy Batter

The milk you use is critical for keeping your French toast moist (not mushy) and allowing the batter to be fluffy and rich in flavor. The best milk to use is a naturally creamy milk, such as light canned coconut (not full-fat as this will be too thick), gluten-free oat milk, pea-based milk, or creamy cashew. The classic ratio of milk to eggs in French toast batter is ¼ liquid to 1 egg. For this vegan recipe, that means ¼ cup non-dairy milk per 1 tablespoon of chickpea flour.

Ingredient Variations & Substitutions

  • Swap Cornstarch for Chickpea Flour: If you can't have legume-based flour, cornstarch can be used in place of chickpea flour, You can even use arrowroot starch to make this recipe corn-free. Cornstarch is tasteless so you will be missing out on some of the "eggy" flavors but that can be made up for with the nutritional yeast.
  • More Eggy Taste: You can add a pinch of Black salt, also known as, Kala Namak. This purple-ish in color rock salt has a high sulfur content which gives it that smell of hardboiled eggs. It's commonly used to flavor vegan egg dishes. You only need a pinch, about ¼ teaspoon for providing the right amount of that "eggy", savory, umami taste!
  • Swap in Brown Sugar: Want a deeper molasses-like flavor to your comforting French toast? Use a sugar-free brown sugar sweetener or any light or dark brown sugar of choice!
  • Other Spices: If you want French toast without cinnamon, you can add some ground nutmeg, cloves, allspice, ginger, even cardamom!
  • Other Extracts: If you don't want to use vanilla extract, you can use a different flavor like maple, anise, or almond! You can even leave it out altogether if you choose.

The Secret To Making French Toast Not Soggy

STALE or TOASTED bread! This is not optional, this is a MUST. It's also critical you let your gluten-free bread stale or lightly toast it since gluten-free bread (that's also vegan) will become a soggy mushy mess if you dip it directly in the eggy soak and try to pan-fry it while the bread is fresh and soft from the package. You want your bread to be just dry enough that the custard mixture can stick and coat the outside of the bread, while not being completely absorbed. Leaving your bread out on a paper towel overnight works or lightly toast your bread until the outside just begins to dry.

How To Make Eggless French Toast

  1. Lightly toast or dry your bread if it's not already stale.
  2. Whisk together the other ingredients in a wide, shallow bowl until there are no lumps.
  3. Heat a pan on the stove with a pat of vegan butter right before you begin dipping the bread.
  4. Dip a slice of bread in the eggless mixture to coat both sides for a few seconds.
  5. Pan-fry the dipped bread slices in the pan for 3-4 minutes per side.
  6. Rewhisk the eggless mixture and repeat as needed for the rest of the slices.
  7. Serve warm and fresh with extra cinnamon, maple syrup, vegan butter, or any toppings of choice!

Tips For Perfect Vegan French Toast

  • Make sure your skillet isn't too hot. Give it a nice medium heat so the bread doesn't burn, but still cooks through evenly. (Bonus: you don't need to worry about undercooked or raw eggs in this eggless recipe!)
  • Make sure to stir the eggless custard mixture between each bread slice. The chickpea flour and dry ingredients tend to settle as the mixture sits.
  • Don't let the bread soak in the liquid mixture too long. Just about 10 seconds with each side submerged should be enough!
  • Keep your gluten-free French toast warm between batches by placing the finished slices on a clean rack in an oven set at 250°F until you're ready to serve.

The Best Toppings For French Toast

No topping is a bad topping for French toast! Here are some ideas to get you started:

  • Classic Maple Syrup and an extra dash of Cinnamon
  • A pat of Vegan Butter
  • Bananas Foster
  • Powdered Sugar Sweetener
  • Crunchy Coconut Bacon
  • Fresh Fruit like strawberries, blueberries, peaches, bananas, apples
  • A dollop of Vegan Yogurt or Vegan Cream Cheese
  • Chocolate Chips
  • Nut or Seed Butters
  • Fruit Jams, Butters, Curds, or Jellies
  • Coconut Whipped Cream or Aquafaba Marshmallow Fluff

How To Store Leftovers

You can make French toast ahead of time and even store leftovers! Let your French toast cool completely after you've pan-fried it. Place the slices on a wire rack to prevent fogginess. Wrap the cooled slices in foil and place them in the fridge for up to 3-4 days.

How To Freeze French Toast

Let each cooked slice cool completely on a wire rack before wrapping each slice tightly in foil. Place the wrapped slices in a freezer-safe bag or container and freeze for up to 4 months.

How To Reheat French Toast Correctly

  • To reheat leftovers from the fridge, place your french toast slices on a baking sheet and heat the French toast at 350°F in the oven or a toaster oven for about 10 minutes, flipping the slices halfway through. If you are reheating frozen French toast, do not thaw the toast beforehand. Reheat the frozen French toast the same way, at 350°F in the oven or toaster oven, for about 10-12 minutes.
  • You can also pop your leftover French toast in a toaster. Just like you would toast bread, toast the French toast until it's warmed through and begins to crisp again.
  • If using the microwave, place your slices of French toast on a paper towel before heating for 30-45 seconds (depending on the power of your microwave).
  • Finally, you can use a skillet on your stovetop. Lightly grease the skillet and warm the French toast on each side for 1-2 minutes.

Ingredients

Scale
  • 6 to 8 Slices of Gluten-Free Bread (lightly toasted or stale)
  • 1 Cup Unsweetened Light Canned Coconut Milk (or other non-dairy milk)
  • ¼ Cup Chickpea Flour
  • 2 TB Granulated Sweetener (or preferred granulated sugar, to taste)
  • 1 TB Nutritional Yeast
  • 1 Tsp Cinnamon
  • ½ to 1 Tsp Pure Madagascar Bourbon Vanilla Extract

Instructions

  1. Prep your gluten-free bread by lightly toasting it in a toaster until the outside is just slightly crisp or leaving it out on paper towels overnight to dry.
  2. In a wide shallow bowl, whisk together the non-dairy milk, chickpea flour, sweetener, nutritional yeast, cinnamon, and vanilla until there are no lumps.
  3. Heat a non-stick skillet on the stove with a pat of butter over medium heat.
  4. Dip each bread slice in the eggy mixture for about 10 seconds with both sides submerged. Let excess mixture drip off before immediately placing the dipped bread on the hot skillet.
  5. Pan-fry the bread for 3-4 minutes on each side until the bread is golden brown and crispy.
  6. Repeat the process for the remaining bread slices, making sure to stir the eggy mixture between slices. Add more non-dairy milk to the mixture if needed.
  7. Keep your gluten-free French toast warm between batches by placing the finished slices on a clean wire rack over a baking sheet in the oven at 250°F until your ready to serve.
