Soft and chewy Vegan S'mores Cookies that are gluten-free and allergy-free! These cookies are made with graham-flavored cookie dough and loaded with a chopped dairy-free chocolate bar and sweet allergen-free marshmallows! Everything you love about delicious s'mores, except you can make them in 15 minutes, indoors, without a campfire!

Instructions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the flours, baking powder, cinnamon, and sweeteners. Whisk together to combine.
  3. Add in the softened cubed butter, prepared egg replacement, and vanilla. Mix together until combined; use your hands if needed.
  4. Roughly chop the chocolate bar using a sharp knife into various chunks and shavings. Cut the marshmallows into thirds. Add the chopped chocolate and marshmallows to the cookie dough.
  5. Use your hands to mix in the add-ins and add a tablespoon or two of liquid if needed to help the dough hold the add-ins.
  6. Form 12-14, 1 heaping tablespoon-sized cookie mounds and space then out on a Silpat or parchment paper-lined baking sheet.
  7. Bake the cookies for about 15 minutes until the tops of golden brown.
  8. Remove and let the cookies cool just a minute or two before serving immediately or transferring to a white rack to cool completely before storing in an airtight container.

Notes

  • You can try these cookies with a flax egg (1 tablespoon of milled flax with 2 tablespoons of water).
  • Any variety of vegan & allergen-free chocolate bar will work like semi-sweet, dark, or milkless milk chocolate.
  • Store leftover cookies in an airtight container at room temperature or in the fridge for about 7 days. Warm in the microwave before serving.
