A sweet slice of summer you can enjoy indoors? The dessert of long summer nights around the campfire, the curiously delicious combination of crunchy graham cracker, rich melty chocolate, and sticky sweet toasted marshmallow! Perhaps you find yourself stuck indoors or just don't have the privilege of a yard or firepit to have that full "s'more experience". Or, in our case, you're gluten-free, vegan, and have food allergies. Let's just make a big s'mores pie to satisfy everyone, shall we?
The 3 Components of Your Vegan S'mores Pie
I would say 3 ingredients, but that's a lie. There are 3 parts to this recipe and some variations if you don't want to go entirely homemade.
How to Make The Gluten-Free Graham Cracker Crust:
My favorite part of the s'more, the graham cracker! You can go homemade or store-bought for this pie crust.
- 1 9-Inch Mi-Del Gluten-Free Graham Style Pie Crust (it's recently been updated to be completely allergy-free and vegan, with new packaging).
or make it homemade:
- 1 ½ Cups Finely Crushed Gluten-Free Graham Crackers
- 6 TB Cold Vegan/Soy-Free Butter
Combine with a fork until the crumbs are moist, press the mixture into a 9-inch pie pan, and refrigerate for about an hour. You can add extra cinnamon and sweetener to your crumbs if desired.
How to make the Chocolate Pudding:
I took some notes from my banana pudding recipe and turned it into a thick, rich chocolate pudding! No heavy cream, eggs, or dairy here!
- Non-Dairy Sweetened Chocolate Milk (if using unsweetened, add ½ Cup of granulated sweetener to the pudding mixture. If you are using plain milk, add ¼ cup of unsweetened cocoa powder)
- Sifted Cornstarch or Arrowroot Starch
- Allergy-Free Chocolate Chips (dark or semi-sweet, your choice)
Heat the chocolate milk on the stove while you slowly whisk in the starch. You want to completely whisk it in so you see no more white! Then add the chocolate chips and keep mixing the pudding mixture over low heat until it begins to thicken.
How to make the Marshmallow Fluff:
I think you know where we're going with this! The essential vegan marshmallow fluff that works for every type of pillowy topping! From whipped cream to our coveted allergy-free s'mores!
- A batch of Homemade Sugar-Free Vegan Marshmallow Fluff
In all its aquafaba glory, the only vegan and soy-free marshmallow in town! You can even toast the whipped peaks with a culinary torch if you have one (I tried using a lighter and it was rather subpar).
How to Assemble The No-Bake S'mores Pie
Since this is a no-bake recipe, that means it's a make-ahead recipe too! This isn't something you can eat right away (not as fast as a microwave s'more), but it's worth it!
- Assemble your homemade gluten-free graham cracker crust or simply take out your store-bought crust.
- Make the chocolate pudding, allow it to cool slightly, before pouring it into the pie crust. Refrigerate the pie for at least 8 hours, preferably overnight to allow the pudding ample time to cool and thicken.
- Make the marshmallow fluff and top the thickened, cold pie. Create some peaks and swirls, using a spoon, and toast the peaks with the culinary torch if you have one.
- Top the pie with extra chocolate chips and crushed gluten-free graham cracker crumbs if desired.
How to Store The Pie
The pie needs to be refrigerated, so if you are not serving the pie right away, store it in a closed container in the fridge. It will be best eaten within 2-3 days. For longer storage, you can freeze the pie for up to 2 months. You can also store the pie in the fridge right away and enjoy it "frozen". No need to thaw, as it will slice just as easy (if not easier), as it does from the fridge.

Ingredients
Gluten-Free Graham Cracker Crust:

- 1 ½ Cups Finely Crushed Gluten-Free Graham Crackers

Chocolate Pudding:
- 3 Cups Sweetened Non-Dairy Chocolate Milk* (see notes for variations)
- 6 TB Sifted Corn Starch (or Arrowroot Starch)

Instructions
For the Crust:
- Take out your premade pie crust or assemble your homemade gluten-free graham cracker crust combining the crumbs and cold butter with a fork until moist, then press the mixture into a 9-inch pie pan, and refrigerate for about an hour. You can add extra cinnamon and sweetener to your crumbs if desired.
For the Chocolate Pudding:
- Heat the chocolate milk in a large pot on the stove over medium heat. Slowly whisk in the starch until you see no more white (add the sugar and cocoa powder during this time too, if needed).
- Then add the chocolate chips and keep mixing the pudding mixture until the chocolate is melted.
- Reduce the heat to low and continue frequently mixing for about 10 minutes until the mixture thickens and bubbles.
- Remove the pot from heat and let it cool slightly before pouring the pudding into your prepared pie crust.
Assembling the Pie:
- Allow your pie to cool and for the pudding to thicken completely in the fridge for at least 8 hours or overnight.
- Prepare the marshmallow fluff according to its recipe and top the cold pie with it. Spread the fluff over the pie and create some peaks and swirls, using a spoon. Optionally, toast the peaks with a culinary torch.
- Sprinkle extra chocolate chips and crushed gluten-free graham cracker crumbs over the finished pie if desired.

*Chocolate Milk Variations: If using unsweetened milk, add ½ Cup of Granulated Sweetener when making the pudding. If you are using plain milk, add ¼ Cup of Unsweetened Cocoa Powder.
