A little salty with your sweet is always a good way to go! Sweet vegan white chocolate, plus salty gluten-free pretzels, all loaded up in a soft cookie dough...need I say more? Cookies are one of those foods you can make ENDLESS recipes and variations for! Any little bobs and bits you have leftover from pantry snacks or baking additions; just throw it all in a cookie dough base and bake to perfection! White chocolate chips and crushed up salty pretzels make one of those perfect cookie combinations!
The Best Vegan White Chocolate Chips
Wait! It gets better than just being vegan! These are allergy-free, meaning NO SOY! When I was able to get my hands on Nestle Toll House's new "Simply Delicious" Allergen-Free White Chocolate Chips, I about died. This is what the allergy-free community has been waiting for! They're not on Amazon yet, but you can find them in Walmart and online. For some reason, any vegan white chocolate chip contains soy (just like those marshmallows!) They're free from ALL the top 8 allergens and organic! Check out the ingredients:
ORGANIC COCOA BUTTER, ORGANIC CANE SUGAR, ORGANIC TAPIOCA STARCH, ORGANIC RICE SYRUP SOLIDS, ORGANIC RICE MALTODEXTRIN, SALT
There are other dairy-free/allergen-free/vegan white chocolate, but no brand has made a standard chip! PASCHA makes baking chips and then there's No Whey's Milkless Polar Dream bars. Now it's so easy, with a household name brand, that you can snag at Walmart and have the best holiday baking season ever!
If you have trouble finding white chocolate chips, good old allergy-free chocolate chips will do when you're in a pinch!
The Best Gluten-Free Pretzels
Now, for the gluten-free pretzels. Thankfully, more and more brands are removing the soy from their gluten-free pretzels and making them top allergen-free too! You have some options and it all comes down to your preference (if you have one) or what you can find at your local grocery. For this recipe, I used store-brand Shoprite mini gluten-free pretzel twists. If you're not in the Northeast than my recommendations for allergen-free pretzels would be:
- Snyder's gluten-free mini pretzels
- Aldi's gluten-free mini pretzel twists or sticks
- Snack Factory's gluten-free pretzel crisps
You can use twists or sticks; it won't matter because you'll be crushing the pretzels up into pieces for this cookie recipe. Just place the pretzels in a plastic or brown paper bag and give them a good bang!
How to make white chocolate chip pretzel cookies
Let's get to the yummy details! The cookie dough is super simple, this way we keep the spotlight on those sweet and salty add-ins!
What you need:
- Gluten-Free Baking Flour
- Baking Soda
- Sugar-Free Brown Sugar OR Dark Brown Sugar
- Vanilla Extract
- Vegan/Soy-Free Butter
- Egg Replacer
- Non-Dairy Milk
- Gluten-Free Pretzels
- Allergy-Free White Chocolate Chips
How to bake:
- Mix all the ingredients in a bowl, folding the crushed pretzels and white chocolate chips in last. Knead the dough with your hands to make sure everything is distributed well!
- Form about 8 to 10 BIG cookie mounds with the dough (2-3 tablespoons) and place them on a lined baking sheet.
- Bake at 350Β°F for 13-15 minutes.
- Remove and let them cool on a wire rack before devouring!
Storing and Freezing:
- Storage: Once you let these cookies cool completely on a wire rack, you can simply store them in an airtight container at room temperature for at least 7 days for best quality.
- Freezing - Baked Cookies: After you've let them cool, freeze them in a single layer, (on a lined baking sheet works), before adding them to a freezer bag.
- Freezing - Cookie Dough/Unbaked Cookies: Once you've made the cookie mounds and spaced them out on a lined baking sheet, instead of baking them in the oven, let the unbaked cookies freeze in a single layer. Once frozen, place them in a freezer bag. No need to defrost drop cookies, just bake the frozen cookie dough a few extra minutes.
Healthier Loaded Cookies for Any Occasion
Whether you're completing your holiday cookie platter, having a cookie exchange, baking some "get well" treats for a friend, or just baking a batch of cookies with the family for a fun treat to enjoy throughout the week, these chocolate chip pretzel cookies will be a go-to! These cookies are low in sugar if you opt for brown sugar erythritol and only have the sugar in the dairy-free white chocolate! There's only half a stick of vegan butter too. They may be LOADED up pretzel cookies, but they're not loaded with tons of junk or allergens! They're:

Ingredients
- 1 Β½ Cups Gluten-Free Baking Flour
- Β½ Tsp Baking Soda
- Β½ Cup Brown Sugar Erythritol (or preferred Dark Brown Sugar)
- 1 Prepared Bob's Red Mill Egg Replacement
- Β½ Tsp Pure Madagascar Bourbon Vanilla Extract
- Β½ Stick (4 TB) Vegan/Soy-Free Butter (cubed, softened)
- 2 TB Unsweetened Non-Dairy Milk
- 1 Cup Gluten-Free Pretzels (crushed)
- Β½ Cup Allergy-Free White Chocolate Chips
Instructions
- Preheat the oven to 350Β°F.
- In a large mixing bowl, combine the flour, baking soda, and brown sugar; mix together.
- Add the prepared egg replacment, vanilla, cubed and softened butter, and milk. Mix everything together and knead with your hands until combined.
- Now fold in the crushed pretzel pieces and white chocolate chips until distributed throughout the cookie dough.
- On a parchment paper or Silpat lined baking sheet, space out 8-10 (2 to 3 tablespoon sized) cookie mounds.
- Bake the cookies in the preheated oven for 13-15 minutes, until the tops are just slightly golden brown.
- Remove the cookies and let them cool completely on a wire rack before storing in an air tight container for up to 2 weeks.
