Banana daiquiris hold such a dear place in my heart! I had my first one many years ago (we're talking virgin!) at the Boathouse restaurant in Wildwood, NJ when we were down on our yearly "family vacation" for the NJ Fireman's convention. I would look forwardΒ to going to one of our dinner there (we would end up going a few times over the week) just for that drink. I thought it was the greatest thing I ever tasted!
I literally could drink these all day, every day. I think I loved the specific ones from Boathouse so much more than anywhere else because they topped it off with a tonΒ of whipped cream π I also felt like such an adult when the waiter came around to take my drink order and I would ask for my fancy banana daiquiri (which is a lie, as I made one of my parents say my order since Β I was the shyest little girl). I remember one time I had to get a strawberry one and it was just not the same. I was so disappointed! However, hand me a piΓ±a colada and I'd be just as happy!
I missed that glorious little frost mocktail with all my heart and the beachyΒ end-of-summer memories it evoked for me. So why not make one right at home in the blender with just some banana, lime, rum extract (and water and ice!). Perfect to satisfy those cravings and probably 1000x cheaper! While I wish I was sitting overlooking the dock, boats, and seagulls,Β (with the best chicken marsala; Boathouse made the best!), this comes in a close second!
The fact that these banana daiquiris are so simple, yet so delicious is even more of a plus. While sometimes I do get the urge to drive 3 and a half hours down to the tip of New Jersey, I guess pulling out my (usually) lonely blender may just be a better idea. EspeciallyΒ since cars and I just don't get along (if you've been following my Instagram stories you'll know what I mean!). A few steps to the kitchen seems much safer!

Ingredients
- 2 Medium-Sized Ripe Bananas (cut in chunks)
- 2 Tsp Lime Juice
- 1 Tsp Rum Extract
- Β½ Cup Cold Water
- 6 Large Ice Cubes
Instructions
- Place all ingredients in a blender and blend until frosty smooth!
- Pour into 2 glasses and serve with a slice of lime and maybe some "whipped cream".

What a beautiful drink! I was always a strawberry daiquiri girl but had a banana one in Mexico and now it's my go-to whenever I'm somewhere tropical. I can't wait to make this cleaned-up version at home so my kids can try it - and so I can add some rum and pretend I'm lying on a beach somewhere π
