If you aren't baking a new batch of cookies (almost) every day, is it even December? With a cookie recipe that tastes just like Christmas (or what you'd presume Christmas to taste like. Fall tastes like pumpkin spice, Winter tastes like peppermint), it would be a tragedy not to bake up a batch! Sure, we have our chocolate peppermint cookies, but why not some WHITE chocolate to bring on the snowy vibes! White chocolate peppermint, so sweet, minty fresh, and one of the definitions of the holiday season!
I got the idea to make these Christmas cookies after an outing with my mom. She stopped in Starbucks and ended up getting a "White Peppermint Mocha" latte. Pretty sure they gave her the standard "Peppermint Mocha", as there was nothing "white" about it. How is one to make up for the lack of white chocolate love, specifically vegan, dairy-free, allergy-free white chocolate love? With the holy grail of allergy-free white chocolate chips, of course! I knew these chips would make our allergy-free holiday season that much brighter!
What you need for these cookies
These gluten-free Christmas cookies are easy and reminiscent of making some peppermint bark!
Ingredients for white chocolate peppermint cookies:
- Gluten-Free Baking Flour
- Baking Soda
- Light Brown Sugar
- Granulated Sugar
- Commercial Egg Replacement
- Vegan Butter
- Allergy-Free White Chocolate Chips
- Peppermint Candies
- Peppermint Extract
Ingredient swaps:
- If you for some reason HATE white chocolate, feel free to use allergy-free dark chocolate chips or semi-sweet chips!
- As always, to reduce sugar, I use Swerve Brown Sugar and Swerve Granulated Sweetener.
- My favorite egg replacement is from Bob's Red Mill, but any powdered egg replacement will work.
- You can use round peppermint candies or candy canes!
The best way to crush peppermint candies
Here comes the fun part. As with any Christmas treat that requires peppermint candies, sure, you can go the lazy route and by pre-crushed peppermints, but wouldn't you rather do it yourself!? Time to get out all the "holiday stress" and crack those candies yourself! I like to unwrap and place my mints in a plastic or paper bag, place the bag until a towel, and bang those babies with a rubber hammer or rolling pin! Easy as pie (or...cookies) and you can crack the pieces to your desired size! I like a combination of small and large pieces for my cookies.

Ingredients
- 1 ½ Cups Gluten-Free Baking Flour
- ½ Tsp Baking Soda
- ½ Cup Brown Sugar Sweetener (or preferred light brown sugar)
- ¼ Cup Granulated Sweetener (or preferred granulated sugar)
- 1 Prepared Bob's Red Mill Egg Replacement
- ½ Stick (4 TB) Vegan/Soy-Free Butter (softened, cubed)
- 1 Cup Allergy-Free White Chocolate Chips
- ½ Cup Crushed Peppermint Candies
- ½ Tsp Pure Peppermint Extract
- 2 TB Unsweetened Non-Dairy Milk (if needed)
Instructions
- Preheat the oven to 350°F.
- In a large mixing bowl, combine the flour, baking soda, and two sugars; mix together.
- Add the prepared egg replacement, peppermint extract, and softened cubed butter. Mix everything together and knead with your hands until combined.
- Now fold in the crushed peppermint candies pieces and white chocolate chips until distributed throughout the cookie dough.
- If the dough is too dry, add a tablespoon or two of the non-dairy milk.
- Chill the dough for about 30 minutes before baking if the dough is too warm.
- On a parchment paper or Silpat lined baking sheet, space out 10 (1.5 tablespoon sized) cookie mounds.
- Bake the cookies in the preheated oven for 10-12 minutes.
- Remove the cookies and let them cool completely on a wire rack before storing in an airtight container for up to 1 week at room temperature.
