One method of cooking that I've always been intriguedΒ by was poaching! It seemed so "out of reach" and difficult. It had been on my list of things to try myself for so long. From bagels to gnocchi, nothing can ever be too difficult, right? So I finally sat myself down and did a bit of research on poaching (safely) methods. I had to laugh out loud when I saw just how easy and simple it was! Poaching sounds so fancy, but it is one of the most "no-free" and surefire ways to cook fish perfectly!
One of my favorite seafood options is wild-caught Alaska cod. It's so fresh, delicious, and just begging to be brought further to life with a fun cooking technique. Since you can buy Alaska Seafood fresh or frozen, you can enjoy the high-quality year-round. Always "ask for Alaska" at the seafood counter or look for the logo on frozen options! Cod has a slightly sweet flavor and beautiful firm, but delicate flakes when cooked. It pairs so well with some burgundy wine and the sweet onion drizzle I made.
My usual go-to method for cooking fish is simply baking it in the oven, but poaching is rather fun! It's also quicker than baking so that's a win-win on those busy nights. It's also a win-win for an impromptu date night meal! So quick and easy, yet pretty fancy, if I do say so! Even with all that, seafood is still something I know many people are timid about cooking at home. It is such a wonderful and healthy protein to add to your diet, though! You don't want to miss out on the deliciousness, nutrition, and wide variety to spice up your normal dinner routine.
The more you cook seafood and fish, the more you love it and feel more comfortable with it. I know so many of you are trying to clean up your diets right now in the new year; adding in a few nights of fish for dinner is a perfect way. Eating healthy does not have to be a plate of chopped up lettuce! Some beautifully, wine poached cod with sweet onion drizzle and some blanched French green beans will surely have you rethinking that mindset!

Wine Poached Cod with Sweet Onion Drizzle

Ingredients
- 2 Wild Alaska Cod Fillets
- Poaching Liquid:
- 3 Cups Water
- 1 Cup Burgundy Cooking Wine
- 1 Tsp Dried Rosemary (crushed)
- 1 Fresh Bay Leaf
- Sweet Onion Drizzle:
- 2 Tsp Apple Cider Vinegar
- 2 Tsp Coconut Oil (melted)
- 1 Tsp Pure Maple Syrup
- ΒΎ Tsp Onion Powder
- Dried Parsley (to top)
- 2 Cups Fresh French Green Beans (tips cut off)
Instructions
- In a large pot, bring the water, wine, rosemary, and bay leaf to a boil.
- Add the 2 cod fillets to the boiling pot and reduce the heat to simmer (uncovered) for about 8 minutes.
- In the meantime, whisk together the sweet onion drizzle in a small bowl and set aside.
- Remove the cod fillets and then add the green beans to that same pot. Bring the pot back to a boil and cook the green beans for 3 minutes. Remove and run the green beans under cold water.
- Divide the green beans between 2 plates, place one cod fillet on top of each, then drizzle on the sweet onion drizzle, and top with a sprinkle of dried parsley.

Β Is that easy or what? I hope poaching doesn't seem as intimidating now! As long as the protein you're cooking in covered in liquid and shrinks in size, you're good to go! I loved being able to repurpose the poaching liquid for the blanching of the green beans as well! A little extra flavor infused in those crunchy greens! A lovely meal of wine poached cod with sweet onion drizzle to freshen up your new year and keep your healthy diet sustainable and mighty tasty π
