  1. Preheat your air fryer to 350°F.
  2. In a large bowl, mix together the potato, onion, starch, and prepared egg. Add spices if using.
  3. Take about 2 tablespoons of the mixture and form a thick flattened disc.
  4. Place in the air fryer and repeat (depending on the size of your air fryer you will need to do multiple batches). Keep the latkes evenly spaced in the air fryer basket for optimal browning.
  5. Air fry the latkes for 5 minutes, flip the latkes, and air fry for about 3 more minutes until golden brown and crisp.

Notes

I used pre-shredded potato, but you can always shred your own, making sure to ring out excess moisture with a cheese cloth.
