Instructions

  1. Preheat the oven to 325°F.
  2. In a large mixing bowl, combine the gluten-free oats, puffed millet, freeze-dried apple, cinnamon, nutmeg, hemp seeds, and milled flax, and mix together.
  3. Next, add the wet ingredients, including the applesauce, vanilla extract, and optional sweetener. Mix the granola until everything is coated.
  4. Line a baking sheet with a Silpat or parchment paper and evenly spread the granola on the sheet in a pressed-down layer.
  5. Bake for 25-30 minutes until the granola is golden brown.
  6. Remove the baking sheet from the oven and allow the granola to cool completely, undisturbed, before breaking it up and storing it in an airtight container.

Notes

  • If you want a sweeter granola, you can add a few drops of liquid stevia to keep it sugar-free, or a liquid sweetener such as maple syrup, brown rice syrup, or vegan honey. A little brown sugar (or sugar-free brown sugar) would be great too.
  • Mixing your granola during the baking process will lead to non-clumpy granola! If you want clusters, make sure to pat the granola down in a single layer on your baking sheet and do not touch it! Allow it to cool completely before breaking it up and storing.
  • Storage: You can store granola for up to 1 month at room temperature in a sealed container like a glass jar, or up to 3 months in the fridge for best quality.
