An essential to any summer bbq or cookout! The Classic American Potato Salad, now as a gluten-free, vegan, and top 8 allergy-free recipe! Super easy to whip up and serve to your guests. You'll be turning everyone into a potato salad fan!

Ingredients

  • 1.5 lbs White Skinned Potatoes*
  • 1/2 Cup Chopped Celery
  • 1/2 Cup Diced Red Onion
  • 2 TB Chopped Parsley
  • 1 TB Chopped Dill
  • 1/2 Cup Vegan Soy-Free Mayo**
  • 2 TB White Vinegar
  • 1 Tsp Dijon Mustard
  • 1/2 Tsp Black Pepper
  • 1/4 Tsp Paprika

Instructions

  1. Boil the potatoes for just 7-8 minutes until slightly soft. Cool and cut them into cubes.
  2. Place the cubed potatoes in a large bowl along with all the other ingredients.
  3. Mix well to combine.
  4. Serve chilled.

*I actually used a bag of these Steamables White Potatoes.
**Another great vegan soy-free mayo option is Just Mayo.
