This simple and elegant French Carrot Salad is a café and bistro staple. Also known as "salade de carottes râpées", this classic French salad is made with freshly grated raw carrots, parsley, and a light lemony dijon vinaigrette. Vegan and gluten-free, this healthy vegetable salad can be served with crudités plates, entrees, and as a refreshing side dish to any meal.


  • 1 lb Raw Carrots
  • 1/2 Cup Chopped Flat-Leaf Parsley

Lemon Dijon Vinaigrette:


  1. Wash, peel, and grate your carrots using a food processor, rotary, or box grater.
  2. Add the grated carrots and chopped parsley to a large mixing bowl.
  3. In a small bowl, whisk together all the vinaigrette ingredients until smooth and combined.
  4. Pour the lemon dijon vinaigrette over the salad and toss well to coat.
  5. Serve the salad immediately at room temperature or store it in a closed container in the fridge until ready to serve.


  • Storage: You can store leftover carrot salad in the fridge for up to 5 days. Bring to room temperature before serving.
  • You can swap the vegan honey with normal honey, maple syrup, or granulated sugar.
