Easy Gluten-Free Apple Fritter Bread! This mouthwatering, soft, and moist Amish apple fritter bread is vegan and allergy-free. Filled and topped with layers of freshly chopped apples and sweet cinnamon brown sugar, and drizzled with a simple dairy-free glaze! This delicious tender baked loaf is a perfect seasonal fall treat recipe for breakfast, brunch, or dessert!

Instructions

  1. Preheat the oven to 350ยฐF.
  2. Whisk together the flour, baking powder, baking soda, and salt in a large mixing bowl.
  3. In a small bowl, melt the vegan butter before adding in the granulated sweetener, flax eggs, and vanilla. Mix well to combine and cream the ingredients together.
  4. Add the wet ingredients to the bowl of flour and mix them together.
  5. Add the non-dairy milk and mix the batter together until smooth.
  6. Combine the brown sugar and cinnamon together in a small bowl and set aside.
  7. Peel, core, and chop the apples into small pieces, add them to a bowl and toss them with the granulated sweetener and cinnamon.
  8. Line an 8x4 loaf panย withย parchment paper and pour half the bread batter evenly into the pan. Add half the apple mixture over the batter and then half the brown sugar mixture over the apples. Repeat the layers again with the rest of the batter, apples, and brown sugar.
  9. Bake the loaf in the preheated oven for about 60 minutes until a toothpick or cake tester inserted in the center comes out mostly clean.
  10. Remove the load from the oven and allow it to rest in the pan for 10-15 minutes while you make the glaze.
  11. In a small bowl, mix together the powdered sugar and water until the mixture is drippy but thick.
  12. Remove the loaf from the pan and parchment paper and allow it to cool on a wire rack before drizzling on the glaze.

Notes

  • Apples: I recommend using Gala, Fuji, Braeburn, Envy, or slightly tart apples like Pink Lady or Honeycrisp!
  • Make-Ahead: To bake the bread ahead of time, let it cool to room temperature before storing it in an airtight container for 3-4 days, un-sliced, at room temperature, or chilled in the fridge for 5-7 days. Include a paper towel sheet in the container to prevent excess moisture from accumulating on the outside of the loaf.
  • Leftovers: To store leftovers, store the unsliced portion of the bread in an airtight container for 3-4 days at room temperature or about 5-7 days in the fridge.
  • Freezing:ย You can freeze the bread by slicing the loaf, but keeping it together in one form (you can also freeze an entire uncut loaf). Wrap the entire loaf in plastic wrap, then foil, before storing in a freezer-safe storage bag for 6-8 months.
  • To Thaw: Thaw the frozen loaf in the fridge overnight, before unwrapping and bringing it to room temperature. Enjoy leftovers at room temperature or warmed in the oven or microwave!
