This Gluten-Free French Apple Cake is soft, delicate, and full of fresh apple chunks! Vegan, allergy-free, and made without alcohol, this classic French cake recipe is so easy and made with a light, moist, and buttery custard-like cake batter, apples, and rum extract for flavor! A simple and traditional dessert that can even be enjoyed for breakfast or brunch!

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together the flour, baking powder, and salt in a large mixing bowl.
  3. In a small bowl, melt the vegan butter before adding in the granulated sweetener, brown sugar, prepared flax eggs, rum and vanilla extracts, and lemon juice. Mix well to combine and cream the ingredients together.
  4. Add the wet ingredients to the bowl of flour and mix together until smooth and combined.
  5. Add the peeled and diced or chopped apples to the cake batter and gently fold them in until all apple pieces are covered in batter.
  6. Line an 8-inch round cake pan or springform pan with parchment paper before pouring the batter into the pan evenly and smoothing out the top.
  7. Bake the cake in the oven for about 55-60 minutes until the top is golden brown and a toothpick comes out clean when poked in the middle.
  8. Remove the cake from the oven and allow it to cool in the pan for about 15 minutes.
  9. Gently transfer the cake from the pan onto a wire rack by inverting it or using the parchment paper to lift it out of the pan.
  10. Once the cake has cooled to room temperature, dust it with powdered sugar if desired before slicing and serving.

Notes

Apples: The best varieties to use are Honeycrisp, Smitten, Pink Lady, Jonagold, Fuji, Envy, Evercrisp, or even tart apples like Granny Smith. Select one variety or use a combo.

Leftovers: Allow the cake to cool completely before storing it in an airtight container at room temperature for up to 2 days. Store it in the fridge for about 5-7 days for best quality. Allow the cake to come to room temperature or warm it slightly in the microwave before serving again.

Freezing: Allow the cake to cool completely before wrapping it tightly with plastic wrap and then a layer of foil before placing it in a freezer bag or transfer it to a freezer-safe container. Store the frozen cake for up to 6 months in the freezer. When ready to eat, thaw the cake overnight in the fridge before bringing it to room temperature before serving.
