Air Fryer Gluten-Free + Vegan Chicken & Waffles (Allergy-Free, Oil-Free)

Comforting American soul food made healthy and plant-based! This Gluten-Free Vegan Chicken & Waffles recipe is not only a meatless wonder, but allergy-free, oil-free, made with crispy air fried cauliflower “chicken” and fresh, fluffy, homemade waffles. Serve it with maple syrup and maybe some hot sauce for an ultimate treat!

  1. For the Vegan Fried Chicken:
  2. Cut the cauliflower into large florets (you don’t have to be precise here) and set aside.
  3. In a small bowl, whisk together the milk and cornstarch.
  4. In a large bowl or plate, toss together the panko, herbs, and spices.
  5. Dip the cauliflower pieces in the sticky milk mixture, then coat the wet pieces in the seasoned panko, before placing the coated piece in your air fryer basket (see note for oven-baked).
  6. Continue with the rest of the cauliflower (enough for two people).
  7. Set your air fryer to 400°F for 15 minutes and allow it to air fry the cauliflower.
  8. For the Waffles:
  9. Grease and preheat a standard waffle iron.
  10. In a bowl, whisk together the dry ingredients, then mix in the wet until you have a smooth batter.
  11. Use half the batter to make 1 large waffle and repeat the process to make another waffle for a total of two.
  12. To Assemble:
  13. Place the waffles on plates, top each with half of the fried cauliflower, then drizzle on the syrup, hot sauce, and any other toppings you’d like. Serve piping hot!

Notes

*To bake the fried cauliflower pieces: Bake in the oven at 400°F for 20 minutes, on a parchment paper or Silpat lined baking sheet, flipping the pieces halfway through.
