This cold Orzo Pasta Salad recipe is gluten-free, vegan, and allergy-free! This Greek-inspired orzo pasta salad is packed with fresh crisp veggies, kalamata olives, artichokes, chickpeas, and tender orzo, tossed with simple homemade vinaigrette! A healthy Mediterranean side dish that's easy and quick to whip up for potlucks, cookouts, and light meal prep lunches for the week!

Instructions

  1. Boil the gluten-free orzo according to the package directions. Just to al dente, drain, and rinse under cool water to stop the cooking process before adding the cooked pasta to a large serving bowl.
  2. Prep all the veggies, drain and rinse the chickpeas, and whisk together the vinaigrette ingredients in a small bowl.
  3. Add the chopped veggies and chickpeas to the cooked pasta and toss them together before drizzling in the vinaigrette.
  4. Mix the entre orzo salad together until everything is thoroughly coated with the vinaigrette. Chill in the fridge for at least 30 minutes before serving.

Notes

  • Store leftovers covered in the fridge for 3-5 days. Toss the pasta salad and allow it to sit at room temperature for a few minutes before serving.
  • Orzo cooking time will vary by brand and variety. Make sure your gluten-free pasta is tender but firm, just to al dente.
