Instructions

White Chocolate Portion:

  1. Place your Rice Chex in a gallon plastic bag and set aside.
  2. Melt the white chocolate chips in a wide bowl, slowly in the microwave. Use increments of 20 to 30 seconds and only mix when you start to see the chips melt.
  3. Add the melted chocolate to the cereal and massage the bag with your hands. Then quickly add the powdered sweetener, peppermint extract, and crushed candy canes. Close the bag and shake everything around to coat.
  4. Pour the coated cereal out on a baking sheet to cool and dry.

Dark Chocolate Portion:

  1. Place your Rice Chex or Chocolate Chex in a gallon plastic bag and set aside.
  2. Melt the dark chocolate chips in a wide bowl, slowly in the microwave. Use increments of 20 to 30 seconds and only mix when you start to see the chips melt.
  3. Add the melted chocolate to the cereal and massage the bag with your hands. Then quickly add the powdered sweetener, cocoa powder (if using plan Rice Chex), peppermint extract, and crushed candy canes. Close the bag and shake everything around to coat.
  4. Pour the coated cereal out on a baking sheet to cool and dry.

Assemble and Serve:

  1. Once both portions are cooled, combine them together in a large bowl or container.***
  2. Add extra white and dark chocolate chips, candy cane or peppermint pieces, or broken pieces of homemade peppermint bark!

Notes

*Crush your candy canes ahead of time using a food processor or a hammer and plastic bag.

** If you opt to use Chocolate Chex, you do not need to add the cocoa powder. If you use Rice Chex, use the 1/4 cup cocoa powder, but reduce the powdered sugar to 3/4 cup.

***Pour out the coated portions over a colander to remove excess sugar and crumbs.
