Take a trip to the Mediterranean with this healthy, gluten-free, vegan pizza. No greasy American fare, but a delicious, nutritious, single-serve pizza you can have any day of the week when the pizza craving hits!
A Few Strips of Mixed Bell Peppers (I used green and yellow)
2 TB Raw Unsalted Cashews (soaked for a few hours and then roughly chopped to make "feta" texture)
Instructions
Preheat the oven to 415°F.
Line a baking sheet with parchment paper. Place your tortilla (from frozen) down on the sheet.
Assemble the sauce in a bowl, which includes the tomato paste and all the spices and lemon juice. Mix and then spread on the tortilla, leaving an edge crust.
Next add the cucumber, olives, peppers, onions, and chopped cashews.
Bake the pizza in the oven for 12 minutes. Remove and serve!
