Seckel Pear & Pistachio Scones

Lovely whole grain gluten-free vegan scones for an elegant winter breakfast or brunch. Seckel pear & pistachio scones are perfect paired with a warm mug of coffee or tea.

Instructions

  1. Preheat the oven to 400ยฐF.
  2. In a large mixing bowl, combine all ingredients expect the sliced seckel pear and pistachios. Mix until you form a nice dough ball. Place this mound of dough on a baking sheet with a Silpat.
  3. Smooth out the mound of dough into about a 1 inch thickness. Cut the dough 4 times to create 8 triangular scones. Gently space them out a bit.
  4. Place a sliced pear half on each scone and then sprinkle with the pistachios.
  5. Bake in the oven for 20 minutes. Remove and let cool.

Notes

I used a Beech-Nut baby food jar, but you could also make your own my blending up some very ripe seckel pears.
