  1. Cooked soba noodle according to directions, drain and rinse.
  2. In a large saute pan, combine the soba noodles and all other ingredients, mix. Cover the pan and cook for 5 minutes over medium heat.
  3. Serve hot or cold!

Notes

Use a vegetable peeling to make shaved strands. You can also use green asparagus if you can’t find purple!
