Apple Cashew Snack Bites

A sweet little no-bake snack bite that’s great for school, work, and on the go! These Apple Cashew Snack Bites are gluten-free, vegan, made right in a food processor, and freezer-friendly! A make-ahead recipe to always keep on hand!

Instructions

  1. In a large food processor or blender, add all the ingredients, except 1/2 cup of the rolled oats, and blend until you get a nice sticky mixture.
  2. Add the last 1/2 cup of oats and pulse a few more times to incorporate them (I do this so I have some larger pieces of oats in the bites).
  3. Scoop out the mixture and roll 10 balls with your hands.
  4. Store in the fridge or freezer!

Notes

*You could use 1/4 cup Maple Syrup if that’s your thing!
