Easy Gluten-Free Funfetti Pancakes (Vegan, Allergy-Free)

Birthday breakfast goals! These Easy Gluten-Free Funfetti Pancakes are vegan, allergy-free, light, fluffy, & all natural! Just 7 ingredients and quick to whip up for kicking off any sweet, celebratory day! This recipe tastes just like cake batter and sprinkles (who says you can’t have cake for breakfast and dessert!)




  1. In a mixing bowl, whisk together the flour, baking powder, and sweetener.
  2. Add the applesauce,  vanilla, and non-dairy milk to the mixing bowl and mix together to form a smooth pancake batter. Fold in the sprinkles last.
  3. Heat a greased non-stick skillet over medium-high heat.
  4. Use about 1/4 of the batter for each pancake, cooking for 3-4 minutes (until you see air bubbles forming all over the exposed surface, flipping, and cooking for another 2-3 minutes. Repeat for the rest of the batter.
  5. Top the pancakes to your liking!
