A sweet, light, fluffy stack of gluten-free Funfetti pancakes seems like just the recipe this year!
Ingredients for gluten-free Funfetti pancakes
Whether it's your birthday, the birthday of a loved one or you're making these for a celebratory brunch, you're going to want the cakey sweetness simple, quick, and easy to prepare! That's why you'll only need 7 simple, everyday ingredients for these Funfetti pancakes! They are light, fluffy, and taste just like cake batter with sweet notes of colorful sprinkles! Bonus, there is nothing artificial here, these cakes are all natural, low in sugar, so you can feel good about cake for breakfast!
What you'll need:
- Gluten-Free All-Purpose Flour
- Applesauce
- Sweetener
- Baking Powder
- Vanilla Extract
- Non-Dairy Milk
- Natural Sprinkles
How to make Funfetti pancakes
Just like making homemade pancakes, BUT with the fun of SPRINKLES added in! Mix together your batter **cough, cough, cake batter**, fold in the sprinkles, and cook those birthday pancakes up in a jiffy! These confetti pancakes are gluten-free, vegan, and allergy-free so you don't have to worry about "eggy" pancakes. You'll only be tasting fresh, light, sweetness! Make sure your skillet is nice and hot before dropping your cake batter down. That is the KEY to a good pancake! Once you see little bubbles form on the top of the batter, one quick and swift flip, to cook the other side of the pancake and you're golden (literally!)

The obvious answer would be sprinkles. How do you top a typical cake? Sprinkles and frosting! With breakfast cake batter pancakes, something like whipped cream seems like a much better option! Pancakes for a crowd?
This recipe makes 4 medium-sized pancakes that can serve 1 to 2 people. You can simply double, triple, quadruple the recipe as needed!
Freezing and reheating?
If you need to prep these Funfetti pancakes ahead of the big day, just cook up your cakes and allow them to cool on a wire rack (just like a traditional Funfetti cake!). Then wrap the cool pancakes in wax paper, stack them in a plastic bag or freezer-safe container and store in the freezer for up to 4 months for freshness. To reheat them, take out the number of cakes you want and either microwave them for a minute or two or heat them in the oven on a baking sheet at 350ºF for about 10 minutes.

Ingredients
- 1 Cup Gluten-Free All-Purpose Flour
- 1 Tsp Baking Powder
- ¼ Cup Granulated Erythritol (or preferred granulated sweetener)
- ¼ Cup Unsweetened Applesauce
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- ½ Cup Unsweetened Non-Dairy Milk
- 2 TB Natural Allergy-Free Sprinkles
Instructions
- In a mixing bowl, whisk together the flour, baking powder, and sweetener.
- Add the applesauce, vanilla, and non-dairy milk to the mixing bowl and mix together to form a smooth pancake batter. Fold in the sprinkles last.
- Heat a greased non-stick skillet over medium-high heat.
- Use about ¼ of the batter for each pancake, cooking for 3-4 minutes (until you see air bubbles forming all over the exposed surface, flipping, and cooking for another 2-3 minutes. Repeat for the rest of the batter.
- Top the pancakes to your liking!

The recipes clearly states: "(or preferred granulated sweetener)". That means you can use any normal granular sugar you typically use.
