These delicious Gluten-Free Gingerbread Waffles are vegan, allergy-free, and so easy to make! This quick and simple holiday breakfast is cozy and comforting, perfect for Christmas morning or a chilly winter weekend! Healthy and low in sugar, these light, and fluffy waffles have the perfect amount of spice and a touch of sweetness in every crisp and tender bite!

  1. Grease and preheat your waffle maker.
  2. In a small bowl, mix together the non-dairy milk and vinegar so it has time to sit and "curdle".
  3. In a large mixing bowl, whisk the flour, baking powder, baking soda, and spices together until smooth.
  4. Add in the molasses, brown sugar, and vanilla. Use a fork to distribute the sticky sweetener into the flour until clumpy.
  5. Pour in 3/4 cup of the prepared vegan buttermilk and mix the batter smooth. If the batter is too thick, add a tablespoon more of the buttermilk as needed.
  6. If using a mini waffle maker, add ¼ of the batter to the hot waffle maker and allow it to cook before removing and repeating the process for the rest of the batter (a total of 4 waffles). If using a standard waffle maker, add ½ the batter to the hot waffle maker, allow it to cook, and repeat (a total of 2 waffles).

Notes

  • You'll make more vegan buttermilk than is needed, so you should have a few tablespoons left over.
  • To store leftovers: Wrap cooled waffles in paper towels before storing them in an airtight container or Ziplock bag in the fridge for up to 3-4 days. Reheat them in a toaster or larger batches in the oven at 350°F.
  • To freeze leftover waffles: Allow your waffles to cool completely to room temperature in a single layer on a wire rack. Wrap them individually in wax paper and place them in a freezer-safe bag or container for up to 6 months.
  • To reheat waffles: Take frozen waffles directly from the freezer and pop them into your toaster or, for larger-sized waffles, you can toast them back up in the oven at 350°F for about 10 minutes (flipping halfway through).
