A Little Debbie copycat you’ll love! Homemade Gluten-Free + Vegan Oatmeal Cream Pies that are top-8 allergy-free and sugar-free too! This healthier recipe is just the dessert you need to bring back childhood memories and keep you away from the vending machine!

  1. Preheat the oven to 375°F.
  2. Mix together the oatmeal cookie ingredients until you have a lumpy cookie dough.
  3. To make 8 cookies, use about 3 tablespoons of batter for each cookie, form it into a pattie and place the 8 patties on a Silpat or parchment paper lined baking sheet.
  4. Bake the cookies in the oven for 15 minutes. Remove and let cool completely!
  5. In the meantime mix up a batch of the marshmallow fluff (recipe here).
  6. Now take 2 cooled cookies and use about 2 tablespoons of fluff in between for the pies.
  7. Repeat for the rest of the cookies to make 4 pies total.
