Gluten-Free Pumpkin Spice Granola (Vegan, Allergy-Free)

This super easy Gluten-Free Pumpkin Spice Granola is a delicious healthy breakfast or snack for the season! It's a vegan, nut-free, allergy-free, sugar-free, and oil-free recipe! Loaded with real pumpkin, whole grain oats, hemp seeds, coconut, and a comforting spice blend to tie it all together!

Instructions

  1. Preheat the oven to 325°F.
  2. Combine all ingredients, except the pumpkin puree, in a large mixing bowl, and stir.
  3. Now mix in the pumpkin puree and stir well until all of the granola is coated and slightly wet.
  4. On a baking sheet lined with parchment paper or a Silpat, evenly spread the granola out.
  5. Place the pan in the oven and bake for about 20-30 minutes, until the granola is golden brown. DO NOT STIR.
  6. Remove, let cool, and then toss the granola (this will create clusters!)
  7. Store the granola in an airtight jar or container for up to 4 weeks.
