This easy 2-ingredient Strawberry Chia Jam takes just 10 minutes to make and has no added sugar! Naturally sweet, juicy, ripe strawberries and protein-rich chia seeds, this healthy and delicious homemade strawberry jam is low-carb, keto-friendly, fiber-rich, no pectin, gluten-free, and vegan! Perfect for meal prepping, used as a sandwich spread, filling, and fruity topping!

Ingredients

  • 1 lb of Fresh Strawberries
  • 2 TB Chia Seeds
  • Sweetener (optional)

Instructions

  1. Rinse, pinch off the green hull, and slice your strawberries in half before adding them to a medium-sized sauce pot, covered. Heat them over medium-high heat, stirring occasionally.
  2. When the strawberries begin to break down, release their juices, and bubble, use a potato masher or large spoon to mash the strawberries to your desired consistency.
  3. Once the strawberries are mashed, stir in the chia seeds and taste the mixture to see if it needs sweetener.
  4. Remove the jam from the heat and allow it to cool and thicken before giving it a final stir and pouring it into a jar to cool at room temperature before storing it in the fridge.

Notes

  • Storage: Store leftover jam in a sealed, airtight container, like a glass jar, in the fridge for up to two weeks.
  • Freeze: Freeze the jam by allowing it to cool completely and storing it in an airtight freezer-safe container or glass jar, with room to expand, for 6-8 months. Thaw it in the fridge when you're ready to use it.
  • Do not can your chia jam.
  • If using frozen strawberries, allow for extra cook time for thawing and cooking off excess liquid.
  • You can add sweetener to your jam by using a few drops of stevia or monk fruit to keep it sugar-free or use liquid sweeteners like maple syrup, honey, vegan honey, etc. all to taste.
