This Ultimate Vegan BLT recipe is packed with smoky eggplant "bacon," crisp lettuce, ripe tomato, and homemade vegan mayo, sandwiched between two toasty pieces of your favorite bread. It's also gluten-free and soy-free. Lunchtime will never be boring again!

Ingredients

  • 2 Slices of Gluten-Free Bread
  • 2 Slices Thick Beefsteak Tomato
  • Fresh Lettuce Leaves
  • 4 Strips or Rounds Eggplant Bacon
  • 1-2 TB Vegan Mayo
  • Salt & Black Pepper (to taste, optional)

Instructions

  1. Lightly toast your gluten-free bread slices and while they're toasting, slice your veggies.
  2. Spread a thin layer of mayo on each slice of bread before layering on the lettuce, tomato, and eggplant bacon. Season your sandwich with salt and pepper or your seasonings of choice before slicing your sandwich in half and enjoying!
