  1. In a small pot on the stove, add the non-dairy milk, sweetener, spices, vanilla, and pumpkin.
  2. Whisk the mixture together and heat over a low simmer until combined and warm for about 2-3 minutes.
  3. Add the freshly brewed coffee, whisk together. If coffee is cold, continue heating the mixture until warmed throughout.
  4. If using a milk frother, add 1/2 cup of coffee to each glass, pour in half the pumpkin mixture, and froth for about 30 seconds.
  5. Top your lattes with vegan whipped cream and a dash of cinnamon if desired.

Notes

  • You can use any non-dairy milk here. Note that other varieties may yield a less creamy latte.
  • You can brew your own ground coffee strong, use 4 ounces of brewed espresso, or chose a cold brew RTD.
