Wine Poached Cod with Sweet Onion Drizzle

  1. In a large pot, bring the water, wine, rosemary, and bay leaf to a boil.
  2. Add the 2 cod fillets to the boiling pot and reduce the heat to simmer (uncovered) for about 8 minutes.
  3. In the meantime, whisk together the sweet onion drizzle in a small bowl and set aside.
  4. Remove the cod fillets and then add the green beans to that same pot. Bring the pot back to a boil and cook the green beans for 3 minutes. Remove and run the green beans under cold water.
  5. Divide the green beans between 2 plates, place one cod fillet on top of each, then drizzle on the sweet onion drizzle, and top with a sprinkle of dried parsley.
