Peanut Pumpkin French Toast

Peanut and pumpkin combine to make the best single-serve, gluten-free, vegan French toast! The only recipe you’ll need for a unique and flavorful healthy breakfast!




  1. In a wide mixing bowl, combine the water, pumpkin, peanut flour, vanilla, stevia, pumpkin pie spice, and cinnamon. Stir to combine.
  2. Heat a lightly greased pan on the stove over medium heat.
  3. Take a slice of bread and dip it in the pumpkin mixture. Make sure it is fully coated on both sides by letting it soak for a minute or so.
  4. Then place the bread in the pan and cook for about 3-5 minutes on each side. Repeat dipping and cooking for the other slice.
  5. Top your slices with whatever toppings your heart desires!
