Rainbow Rockin' French Toast (Gluten-Free, Allergy-Free, Vegan)

A special breakfast recipe that will bring out all the smiles! Rainbow Rockin' French Toast that's gluten-free, allergy-free and vegan so you can serve the kids something fun and prove that eating with food allergies is not boring!




  1. In a wide bowl, whisk together the coconut milk, baking powder, cinnamon, and vanilla.
  2. Pour the cup of cereal out on a plate and place next to the bowl.
  3. Dip each slice of bread in the coconut milk mixture before coating both sides with the cereal on the plate.
  4. Heat a greased non-stick skillet over medium-high heat and cook both sides of the French toast slices for about 3-4 minutes.
  5. Transfer to a plate and top with anything you'd like!
