My dear foodie friends, for far too long have I held out on you! Back in the beginning of the summer when I posted a "sneak-peek" of this recipe on Instagram, I was so excited to share it with you...but then I forgot. However, after some salt-talk on Monday, it reminded me of pretzels and thus, this recipe! The moment I found out about Snack Factory making a version of their Pretzel Crisps GLUTEN-FREE, I was beyond ecstatic. However, I had low hopes since basically all gluten-free pretzels contain soy. To my great joyous surprise, these gluten-free mini pretzel crisps were free of ALL top allergens and nasties! Gluten-free, soy-free, egg-free, dairy-free, and nut-free! You could say that was a very happy food-allergy moment in my life.

I hadn't been able to have pretzels in years! And forget about having the iconic pretzel crisps! I used to love them growing up! I have fond memories of eating the original pretzel crisps at dance competitions as a snack, (weird, but vivid memories!). So obviously I stocked up right when I found them in the stores and the first thing I did was snack and savor! O pure pretzel bliss! They tasted so good, salt and all! And they are so cute, right? They remind me of little baby bow-ties! Now, the second thing I knew I had to do with these pretzels was make a killer recipe for the blog. That I did!

How about the perfect coating for chicken? (I made a lot of new chicken recipes this summer...#sorrynotsorry). I think this was even better than just snacking on them straight! Pretzels, chicken, and then one more stellar flavor...honey mustard! Gotta jazz it up even more and blow this one out of the park. The honey mustard actually plays a double role in this recipe. Not only does it add a perfect mustardy sweet flavor, but it also acts as the "glue" for the pretzels to stick to the chicken. It worked fabulously well and these was pretzel goodness in every chicken bite!

I also just increased your dipping options to more honey mustard or good old ketchup 😉 (Wonder which I chose?) The more flavors in one bite the better 😉 Speaking of honey mustard, that brings back memories of another pretzel favorite back-in-the-day. Those Rolled Gold honey WHEAT braided twists. O those were heaven! Those also evoke memories of heading to my first competition so many years ago. North Atlantic Reginals National Baton competition. It was the first time I had those pretzels and we also ended up winning 1st place in out category there (pretzel magic). Obviously pretzels and dance/twirling competitions had a big relationship in my life, haha!

Even more of my favorite pretzels growing up? Utz unsalted sourdough specials or the think sourdough hards, (so dry, so good!), I always hated those little waffle pretzels in the square shape...freaked me out. And if we are going to go down the road of soft pretzels, there was nothing like an Auntie Anne's cinnamon sugar soft pretzel while walking around the mall! O the smell! I think the small was better than the actual pretzel (they were so messy!). Things got a bit easier I remember when they came out with the more convenient soft pretzels sticks 😉

Homemade soft pretzels are on the recipe bucket list, don't you worry! They can't be harder than homemade bagels (which I've mastered), but I just keep pushing it off since I really don't enjoy baking that much. Now let's bring this back to the present and talk about this recipe! I'm pretty sure this is going to please kids and adults alike! I know it did in my house, while still being o so allergy-friendly and pretty dang healthy if I do say so myself! (By the way, 35 gluten-free pretzel minis has only 110 calories). I'm telling you, make your family a super fun dinner by amping up boring chicken tenders with amazing gluten-free pretzels!

Ingredients

Scale
  • 2 Cups Original Gluten-Free Mini Pretzel Crisps
  • 2 TB Honey Mustard
  • 1 lb Chicken Tenders

Instructions

  1. Preheat the oven to 350°F.
  2. Place the pretzels in a large plastic bag and smash/crush them either with something heavy like a rolling pin or your fist! Pour out the crushed pretzels on a plate and set aside.
  3. Now apply the honey mustard to the chicken tenders, coating them completely with your hands, then dipping and rolling them in the crushed pretzels.
  4. Place the coated chicken tenders in a greased baking pan, pour any extra pretzels on top, and bake for 25-30 minutes, until the chicken is thoroughly cooked.

    Love how simple this recipe is. My hubby loves fried chicken for the crispy crust and I prefer baked. I think this will be a nice compromise for a crunchy outside that's baked.

    Yummmm to this! As a new gluten free chick this is totally screaming to me. Although the price tag for gluten free pretzels does NOT. $5 for a small bag? Sorry, I would eat that bag in 2 days!

    Chicken is something that everyone eats the most and I am always looking for new things to do with it. Both my kids are totally in love wwith pretzels. One just likes to lick the salt off and the other likes to eat a whole bag at a time. This would be great recipe for them too since they get bored with chicken. They don't eat beef or fish so they usually get pork or chicken.. Thanks from them too!

    I love these pretzels! I brought them with me on a wine tasting weekend since wineries don't serve gluten-free crackers or anything during tastings. I love the little size and bites. Such a fun idea to use them as breading!

    I used to love those sourdough bits and I think there was a honey mustard flavor. I just love honey mustard wherever it goes! This is definitely a fun way to eat chicken!

    I just relived so many pretzel memories while reading this, it's like childhood as told through pretzels! I remember liking the honey braided ones alright, and I never liked the sticks, too boring and often too salty. The square ones were paned windows, not waffles, and I loved those! My faves were always the good old twisty ones <3 And Auntie Annes soft pretzels--best mall food ever! Did you ever have the pretzel cracker things? They were like pretzels on one side, crackers on the other. They were weird, but so good dipped in spinach dip...I think I lived on that for a few months of my life 😀 haha These mini pretzels beat them all on the cuteness factor though! I love the pic with them all overflowing the plate! For not caring about photography that pic is pretty awesome 🙂 xoxo

      I should have made this post a whole epic poem about pretzels! Hahahaha! I love recalling all my old childhood food memories when I write a recipe!
      If they ever make honey-non-wheat-pretzel twists, my life will be made! And yea, sticks were boring and always burnt!
      And no, I never had a pretzel/cracker...damn!
