Happy Tuesday! I hope your summer weather has been better than mine here in Jersey. Although I know most of the country is experiencing crazy weather from extreme heat, humidity, and crazy endless storms. I have to hold my breath every time it starts raining here since my power goes out with the flip of the wrist. Just a few weeks ago it went out in the morning for 4 hours with no explanation...no rain...nothing! But thankfully we have a generator so we can hook up the fridge, sub-pump (so the basement doesn't flood), and have a few extra outlets. But we have a well so when we have no power that also means no water.

Anyway, even though is has been extremely hot here (and humid) I try not to complain about the heat since I wish for it so much in the winter. Those freezing winter months are when I wish I lived in Jamaica or some tropical island where I don't have to wear 50 layers to stay warm. And that brings me to the premise of this post. Jamaican Jerk Seasoning! I had never cooked with this blend of spices before this winter and I have been a huge fan ever since.

So here is my recipe for Jamaican Jerk Chicken!  The amounts for the spices are just general ratios. I do not measure them out I just eyeball it and play around and it always comes out great. But if you do not feel comfortable cooking intuitively just use the general amounts.

Ingredients

Scale
  • 4 Skinless Chicken Breasts
  • Jerk Seasoning Mixture:
  • 4 Limes (zest and juice)
  • 1 Packet of Stevia
  • 1 ½ Tsp Dried Thyme
  • 1 Tsp Ground Allspice
  • 1 Tsp Cinnamon
  • ¼ Tsp Ground Cloves
  • ¼ Tsp Black Pepper
  • ½ TB Ground Ginger
  • 1 Tsp Minced Garlic
  • 1 Tsp Onion Powder
  • ½ TB Dried Cilantro
  • ½ TB Dried Parsley
  • 1 TB Chopped Fresh Cilanto

Instructions

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, zest and http://amzn.to/26utoAw all 4 Limes. Then add the rest of spices and herbs and whisk together.
  3. Then place the Chicken breasts into the bowl to coat. Pour everything in a plastic bag (or leave in the bowl, covered) and let marinate for 30 minutes.
  4. Pour the Chicken and mixture into a baking dish and bake in the oven for 30-35 minutes.

    Yum! Jerk chicken is so delicious, and I love your fresh take on it. I am an 'eyeball it' cooker as well. Years ago, I finally bought measuring spoons for my kitchen and it was because a friend looked at me like I was slightly crazy when I said I didn't have any. I just pinch, dash and hand-full here and there. Thanks so much for a great recipe!

    I have a Jerk Chicken recipe in a Rachael Ray cookbook that we just LOVE. I haven't been to Jamaica but the smell of it cooking makes me feel like I'm there. We love either sweet plantains, tostones with mojo sauce or arroz con gandules to round out the meal.

    Love this recipe, Rebecca! Pinned for safekeeping. I also love that you don't really measure either. That's how my mother taught me to cook...by sight. When I have to prepare a recipe for someone else, converting my sight measurements into real measurements is the hardest part (although I have developed a little system even if it is time consuming in the middle of preparing a meal).

    i definitely think a marinade/seasoning makes or breaks chicken! the cinnamon and ginger sounds really interesting in your recipe, i bet i'd love it. it's real hot here in CT and i'm loving it. i hate hate HATE winter and i refuse to complain about this heat. my town loses power in 2 seconds flat! it's quite frustrating. it started raining the other day and the power went off within 5 minutes, seriously?

Celiac Disease is NOT a food allergy 🚫🍞 So Celiac Disease is NOT a food allergy 🚫🍞

So many people still confuse the two, but it’s an autoimmune disease, not an allergy. That means gluten doesn’t cause an immediate allergic reaction resulting in hives or swelling…it causes your immune system to attack your small intestine longterm. 

This distinction matters because:
👉 There’s no medication or quick fix
