Grab your slow cooker, it's time for a hot and spicy meal! Gluten-free, paleo slow cooker buffalo chicken that will warm you right up and has a secret creamy ingredients to help you handle the spice!

'Tis the season for cookies and now 'tis the season for the slow cooker! I've been slacking on slacking though. I haven't been lazy and used the slow cooker in weeks! The weather has just been too "beautiful" for this time of year that I've been grilling outside every chance I can get! I will be grilling until the lid of the grill is frozen shut! If you remember, I was deprived of said grill most of the summer, so I like to think I'm making up for those sad sorry days. Probably just writing this post is going to jinx everything, and the slow cooker will be coming out soon enough.

So this recipe is actually a throw-back to the summer, when I didn't have a grill, and instead used the slow cooker often. When I make a slow cooker chicken recipe, I've learned that the more simple, the better sometimes. From salsa to bbq and even applesauce. Yet, to make it have some more pizzazz, I like to throw in my own extra touch. With a hankering for buffalo, I knew that classic flavor needed something more.

I like spicy things, but I also don't have a high tolerance for spicy things (nor does my reflux disease). My brother loves buffalo though. Whenever he's eating something with the sauce, I just adore the smell. But I can also just smell the spice and can picture the consequences, no matter how delicious. However, it's proven that milk or milk liquids can cool down the fire. Being the innovative chef that I am, and always keeping some coconut milk in the pantry, I had my solution for both the spice and the pizzazz.

Buffalo sauce with some creamy coconut milk in the background; I think we have a winner! I was also pretty stunned to learn that Frank's Buffalo hot sauce is vegan...? I know. Mind blown! So of course, no dairy here!

To make things even more yum and flavorful, I added some onion slices and garlic of course! How long did it take to throw it all together and crank that cooker to low and slow? 5 minutes tops, but then the horrid wait for 6 hours ensued. It really is rough when the entire house smells like mouthwatering buffalo sauce. I can assure you the reward is worth the wait! This chicken also made killer leftovers too, once the flavors were even MORE infused in the chicken!

Ingredients

Scale
  • 4 Chicken Breasts (1.5lbs)
  • 1 Bottle of Franks Buffalo Sauce (or Red Hot)
  • 1 Medium Yellow Onion (sliced)
  • 1 Tsp Minced Garlic
  • ½ Cup Lite Culinary Coconut Milk

Instructions

  1. In a slow cooker, first layer int eh onion slices, then the chicken. Pour the sauce, coconut milk, and garlic over top.
  2. Cover the slow cooker and cook on low for 6-7 hours.

There's a lot of flavor there! Still super spicy for me, but it was well worth it! I don't have buffalo too often, but when I do, it has to be good! But it is the perfect recipe to warm you right up, way up!

So tell me:

+ Do you like buffalo? Frank's also make a hot buffalo sauce and the original wing sauce which I used. But the original original Red Hot can also be used here!

    OMG, these chicken looks amazing. My husband loves Frank's so I have to make this. I was wondering how to "tone down" the heat for me. never thought of using coconut milk.

    This recipe looks great and you could substitute the Buffalo sauce for pretty much any other sauce you like. It's easy and full of flavor.

    i love slow cooking chicken, well because, i always burn grilled chicken! I also am a huge fan of buffalo chicken as long as it's not too spicy because I can't take too much heat lol. This could not be easier with only a few ingredients!

      Try with the coconut milk! It totally helps!
      Girl, just 10 to 12 minutes on each side of the chicken (on a gas grill) and BAM, you're golden!

    Love how simple this is and I love buffalo chicken! Yes I have to kick the spice down because I'm a wimp, but one of the best flavors for chicken in my opinion 🙂
