O yes, I did! Granola power or slow cooker power, I'm not sure, but combined, they produce one of the most magical and yummy snack creations that will ever come out of your kitchen! Breath in the sweet buttery coconut, breath out bliss and joy! Slow cooker granola is a "thing", I had just never taken the time to do it myself. I love the quicker methods like in the skillet, but there is something about the slow cooker magic that couldn't be denied! This lesson in having a little patience will be remembered going forward.

Just dump and go, this granola recipe is the simplest there can be! You don't have to worry about burning your granola in the oven of "baby-sitting" it on the stove. Let the slow cooker do all the care and tending. A couple of quick hours later and you'll have the most luscious, soft, sweet, buttery granola you've ever tasted...promise! I think I also paired a great combination of ingredients and flavors together, regardless of any slow cookery magic. I knew chocolate coconut was a yummy combo, so why not vanilla coconut?

The moment this batch of chewy delicious granola dwindled, I made it again right away. I usually never make the same granola recipe twice in a row (if ever); I usually am too excited to try another crazy combo or method I have in mind. But this one...it deserved a second go-round. If something ain't broke, why fix it? Enjoy every moment of it while it's fresh and beautiful. I've always loved giving granola as one of my "famous" edible gifts and I know this slow cooker version is about to blow everyone's socks off! It blew my off, way off! It does take the "granola baking magic" out of the whole ritual of weekend granola stock replenishing, but you can't deny the results you get!

This granola is full of vanilla quinoa pops, shredded coconut, gluten-free oats, puffed rice, and more vanilla and coconut! Gluten-free, vegan, nut-free, allergy-free...it wins! It only takes about 2-3 hours, so nothing too long in slow cooker terms. Just give it a little stir every 30 minutes or so and leave the lid cracked on the cooker. Enjoy the aromas and you stand by and wait ever so patiently to devour that warm, chewy, buttery, sweet whole grain delicacy! Breakfast, snacking, topping for desserts or smoothies? Go for it!

Ingredients

Scale
  • 2 Cups Vanilla Quinoa Pops
  • 2 Cups Gluten-Free Rolled Oats
  • 1 Cup Puffed Rice
  • ½ Cup Unsweetened Shredded Coconut
  • ½ Cup Lite Culinary Coconut Milk
  • ¼ Cup Vanilla Stevia Syrup
  • ½ Tsp Pure Madagascar Bourbon Vanilla Extract

Instructions

  1. Lightly grease the inside of your slow cooker with some coconut oil before placing all ingredients in the cooker.
  2. Mix the ingredients to combine, then place the lid on the cooker (slightly ajar) and set on high.
  3. Cook for 2-3 hours, stirring every 30 minutes.
  4. Remove, spread on a flat surface like a baking pan, and allow to cool completely before storing.

I can smell it from here! Can you? You will...once you get that slow cooker out on the kitchen counter and get "not cooking"! If this doesn't change how you think about, cook, and eat granola, you're allowed to yell at me. But don't worry, you can save your voice 😉 I KNOW you are going to love this easy peasy method! It's crazy good and I haven't been about to stop thinking about this slow cooker (or crock-pot) vanilla coconut granola since!

    Granola in the crockpot? What what? Now that's a clever use of the crock pot. I drag my poor old crock pot out like twice a year. I need to make more recipes in it. I tend to think of it as a winter appliance - this certainly proves me wrong. Sounds delicious and a great thing to make to have as a portable snack.

    I love making homemade granola, I normally bake my in the oven for an hour to an hour and a half, using the slow cooker could be a good option if I am out for the day as I can leave it to cook without worrying.

      If you read the post I said it is nice and chewy. You can't make crunchy granola in a slow cooker.

    YOu made such a good point - every flavor combo is chocolate and coconut! I love that you switched it up to Vanilla! I think I should combo will go well with so many different yogurts, ice cream, and snack, etc! Can't wait to try it myself 🙂
