I have a great story for these oatmeal raisin cookies! Okay, maybe not "great" but more childhood memories to share with you. If you've been reading this blog for any amount of time, you know I love reminiscing with old childhood memories revolving around remakes of recipes. That is where I get a lot of the inspiration! Oatmeal raisin cookies, now gluten-free, allergy-free, and vegan, but still with that chewy and soft bite that I just LOVE!

When I was a "wee one", my mom would take my brother and I to the grocery store with her (of course). (The same beloved grocery I go to every week today!) My brother and I would usually go off (never more then an aisle or so away from my mom), but we would have some adventures to keep us occupied. One of the things we did was scour the shelves for "expired" food. When we saw a "best by date" that was passed and expired, we'd grab that box and hold tight. No, we didn't want old stale food, but we did want money!

This may have been just my grocery store, but when you brought up expired food to the customer service counter, they'd give you a dollar for each product! I'm not sure if they still do it, but it was one of those "underground" hacks that only a few people knew about. You could make bank if you really scoured those aisles. What does this have to do with chewy oatmeal raisin cookies? Well, the brand my mom would always buy us (and the best, might I add!), you were bound to find a bunch of packages each time you looked with past "best by" dates. I guess no one was buying them but us!

I now always associate oatmeal raisin cookies with those stale packages. But the packages that weren't stale...SO GOOD! Soft, chewy, perfectly sweet and hearty. That's why I just needed to bring back the old favorite and classic cookie. Now gluten-free, allergy-free and vegan. Super simple, clean, and healthy. One of the only things where adding raisins is a-okay! The essential "grandma's cookies" but better 😉

Ingredients

Scale
  • 1 ½ Cups Gluten-Free Rolled Oats
  • 1 Cup Homemade Gluten-Free Oat Flour
  • ½ Cup Arrowroot Starch
  • 2 Tsp Baking Powder
  • ½ Cup Raisins
  • ⅓ Cup Erythritol
  • 1 Tsp Cinnamon
  • ½ Tsp Pure Madagascar Bourbon Vanilla Extract
  • 1 Cup Unsweetened Applesauce

Instructions

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, combine all the ingredients, adding the applesauce last, and mixing until you have a thick cookie batter.
  3. On a baking sheet lined with a Silpat or parchment paper, place 2 tablespoon sized cookies evenly spaced out (about 14-16 cookies total).
  4. Bake in the oven for 18-20 minutes. Remove and let cool.

O the delicious oatmeal raisin cookie memories! Honestly, if I were to choose between a chocolate chip cookie and and oatmeal raisin, I would choose the oatmeal! (I know...shocker for this chocoholic!) Any cookie, freshly baked, warm, and cozy is good enough for me! But right now...I'm craving one of these bad boys (and you won't have to worry about them going stale...trust me 😉 )

    It's a good thing the packages weren't expired. Although "best buy" dated products are listed as such when the food brand prefers it to have been sold by, so I see nothing wrong with getting a couple 🙂 But very clever in getting some cash! And these cookies look heavenly. I know my grandma would love them!

    I love these type of cookies, they are so good. As a good Scottish lass, I am always well stocked up with porridge oats to make porridge, add to burgers, to top crumbles, to make flapjacks (chewy oaty squares, not pancakes), to make cookies and to add to cranachan.

    I haven't done any baking with Arrowroot starch - I usually use collagen to help bind cookies like these, but raisins..... I'd take a oatmeal raisin cooking over chocolate chip any day
