Who doesn't love muddy buddies? Crazy people, that's who! I actually don't remember eating muddy buddies as a kid, but after all these years as a food blogger I've seen so many yummy and drool-worthy recipes for muddy buddies. All those recipes called for tons of butter, sugar, fats, well, you get the picture. With me being me, I had to make a healthy gluten-free and vegan recipe before I could indulge in the delicious cereal snack!

Once Chex finally made their cereals free of BHT, I was able to enjoy one of my old gluten-free favorites yet again. That also meant it was time to make the muddy buddies. By the way, I hate the term puppy chow. It is classically called muddy buddies. Think of "muddy" coated chew cereal and the "mud" being the chocolate, sugar, or whatever coating you decide to use. My muddy buddy recipe tastes like a Reeses peanut butter cup. I use cocoa powder, peanut flour, some powdered Swerve, and stevia syrup. Literally this is the most addicting snack. If you pour some in a bowl and add in some milk...it's approved for breakfast!

You know what's even more fun? No bake! Just toss in a big (BIG) bowl and mix it around or shake it in a big bag! It is so easy to make, which may be dangerous since it's so addicting! One of my all time favorite sweet snacks for sure! I still remember the day I made this. It was a sunny Sunday last summer after I came home from the local farmer's market in town. I said screw the veggies and let's make muddy buddies!

Ingredients

Scale
  • 5 Cups Rice Chex
  • ⅓ to ½ Cup Peanut Flour
  • ½ Cup Powdered Erythritol
  • ¼ Cup Unsweetened Cocoa Powder
  • ¼ Cup Cocoa Stevia Syrup
  • Optional Add-Ins:
  • Mini Chocolate Chips
  • Roasted Peanut Halves

Instructions

  1. Toss all ingredients in a large bowl or place all ingredients in a large plastic bag. Shake or mix until fully coated.
  2. Store in an airtight container or bag.

Rice cereal, some good protein from the peanut flour, cocoa, and sweetness! Healthy, gluten-free, vegan, sugar-free indulgence that's no-bake and perfect for summer! I haven't made any in months and that is about to change as I'm drooling just remember the taste of this delicious sweet dessert/snack/breakfast. So who's with me? Are you ready to get MUDDY?

    I love peanut butter and I love that this recipe calls for a few ingredients. I am they can't for more than 2 days in our house, we would eat them all in a day!
