Need a little sunshine in your life? I know I do! You know I thrive on sunshine (it's all in the name!) As I'm writing this post, it is dark, dreary, and rather cold. Not one peek of sunshine for the last week. It really puts a damper on things. No good photo shooting = no recipe creating = no stress relief = anxiety to the max! You can say my life revolves around the sun!

My brother tells me he loves dark, rainy days. I just stare at him and shake my head. I just don't understand. Sunshine elicits happiness, and I need happiness! It's a proven scientific fact that sunshine brings "smiles" and feel good hormones to flow. Think about it. Do you smile more on a sunshine-filled day or a rainy day? I thought so.

I do know one thing. I'd rather have it pouring rain and storming than have these murky gloomy days. It's all or nothing for me, none of this iffy stuff. When the day is totally lost, then I feel like bad about it. But if it's not totally ruined, the day just feels so wasted! Give me rain or give me sun! Nothing in between!

I thought it was just an "April showers, bring May flowers" thing, but I'm not so sure. So instead of wallowing, let's make our own sunshine, in the form of ALL the yellow veggies and spiralized goodness! You're smiling already, aren't you?

You bet! A second spiralized beet salad, but this one uses, my favorite, GOLDEN beets! Not only golden beets, but champagne mango, sweet yellow bell pepper, and sunflower seed butter (and some lemon for extra yellow zing!) It's a fabulous unexpected salad of bright flavors and textures. Plus, we all know that anything spiralized is going to be good!

Ingredients

Scale
  • 1 Large Golden Beet
  • ½ Cup Sliced Yellow Bell Pepper
  • 1 Champagne Mango
  • 2 TB Sunflower Seed Butter
  • 2 TB Roasted Sunflower Seeds
  • ½ TB Lemon Juice
  • Zest of 1 Lemon
  • ¼ Tsp Onion Powder
  • Pinch of Stevia

Instructions

  1. Cut the ends off and peel your beet before spiralizing.
  2. Slice the bell pepper into strips.
  3. Slice the mango into thin strips (do not peel).
  4. Toss the veggies together, then add the sunflower seed butter, sunflower seeds, lemon juice & zest, onion powder, and stevia. Toss well.
  5. Serve with additional sunflower seeds and lemon slices.

Notes

This is the only spiralizer you should have!

    Do you live in Philly? 'Cause we have been having the exact same dreary weather for weeks. Ugh. Today, sunshine, and it is such a joy! I'm with you on the rain -- give me a good storm (and reason to curl up, read and write all day) over damp gloom. This recipe is an antidote to any gray day, and it sure beets {teehee} plain old bananas for a fave yellow food.

    I'm with 'ya. I love the sun so much that I named my beloved pup Sunshine =)
    I am not a huge beet person, but I like the idea of it spiralized in a salad - especially paired with mango for a bit of sweetness. Sounds perfect!

    Fresh and flavorful not to mention beets!!!! I was going to whip up my Bright and Beautiful Golden Beet Salad this week but I love this so I might switch it up since I have mango and I would have had to go pick up an orange.

    We love beets at our house (although we've never had golden beets - I didn't know they existed, so now I HAVE to try them). And my seven-year-old was just asking me if people eat sunflower seeds. I told her they did, and I'll have to make this dressing to prove it!

    I'm kind of like you. I love sunny days, but I love rainy days too. I just can't stand when it's all gray and NOTHING happens. 🙂

      You must get some MaraNatha Sunflower butter! They make the BEST!

    This salad looks so beautiful! I have always been scared to try beets (maybe because of the color) but I keep hearing that golden beets are like a "gateway" beet so maybe I will try them! Especially since there are mangoes in this salad... my absolute fave 🙂

    I so agree!!! Gloomy days make me want to curl up in my bed under the covers and never come out. I have no motivation on those days. I do love a good thunderstorm though, but the dreary gloomy with spitting rain - no thanks!! We finally had some sunshine yesterday and a little bit today and wouldn't you know, I've got a list a mile long of things I need to get done and I actually don't mind doing them on days like this.

    This salad is just gorgeous. LOVE the color and I love beets...especially golden beets. Yum!

This distinction matters because:
