Have you ever eaten something that is just so amazing you have to stop mid-chew and contemplate what you just put in your mouth? Well, I can tell you these veggie burgers are the definition of that very moment. I've had many pre-made veggie burgers bought from the grocery. Most were gluten-free, vegan, good, quick, and easy, but once I discovered my soy-allergy they became a no-go. So what was a girl to do without her quick veggie burger option? Make her own!

Ingredients

Scale
  • 2 Cups of Cooked Chickpeas
  • ½ Cup of Chickpea Flour
  • 2 TB of Ener-G Egg Replacer
  • ½ Cup of Water
  • 2 Cups of Chopped Kale
  • 1 Cup of Shredded Carrots
  • ½ Tsp Garlic Powder
  • ½ Tsp Onion Powder
  • ¼ Tsp Black Pepper
  • 1 Tsp Chili Powder (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. Place the chickpeas, chickpea flour, egg replacer, water and spices into a large food processor. Then add your raw veggies on top.
  3. Process and pulse the ingredients together. You may have to stop and scrape the sides about halfway through to make sure it is a well mixed and thick batter.
  4. Now scoop out the mixture with your hands and make about 5 (or 6 smaller) palm-sized patties.
  5. Place the patties on a Silpat or parchment paper lined baking sheet.
  6. Cook the burgers for 10 minutes on one side, flip and cook for an additional 10 minutes on the other side. Take them out and devour or let them cool before wrapping in wax paper and freezing them in a plastic bag. (Simple reheat in the microwave or toaster oven!)

Simple, easy, and one of my favorite lazy recipes to keep on hand in the freezer! These are so hearty and delicious; the chickpeas and chickpea flour really allow them to hold up in flavor and texture! These will always me my favorite and the most incredible veggie burger!

    These look delish, and I've never worked with chickpeas, but I've seen 2 recipes lately that use them, and I think that I need to jump into working with them. They are packed with so much goodness, I really need to add them to our diet. I have been eating less meat and my daughter is a vegetarian, this would work for us, hugely! Thanks for sharing!

    Rebecca, I've eaten a lot of veggie burgers in my day, and this sounds like a great one! Though I'm not vegan, that is my ideal. I was vegetarian at one time, but my husband does not thrive on it and I don't have time to prepare different meals. But I eat a lot of vegetarian/vegan lunches. And I have developed lots of gluten-free recipes for my growing number of GF friends. I look forward to trying this gorgeous burger!

    I have to say I'm really impressed by this recipe before even trying it. Most recipes for veggie burgers that I see are really involved and have a ton of ingredients that I've never heard of- let alone want to go out and find/buy just to never use again. This seems really straightforward and I'm excited to give it a try!

      That's one of the things that drew me to this version! So many veggie burgers have tons of nuts and grains and just seem so heavy. This one is nothing like that and so adaptable!
