A satiating and hunger-crushing recipe for the best Vegan Coconut Coffee Breakfast Shake! When you’re rushing out the door, but still need morning fuel to keep you going all day, this gluten-free, healthy high fat, sneaky protein smoothie is just what you need (with a caffeine kick)!
I hear it all the time, “There’s no time for breakfast!” or “I don’t eat breakfast”. INSANITY! One of the most important things for productivity and focus is to eat (or drink) some breakfast. It doesn’t have to be the exact moment you wake-up. I typically eat breakfast about 4 hours after I’ve risen for the day and gotten my workout and some work done.
Breakfast is “breaking the fast” from when you last ate (dinner or a small snack before bed) and the meal that will get you through the rest of your work day. It should be healthy, sustaining, nourishing. Something that doesn’t leave your stomach growling 20 minutes later. Not all of you are as fortune with time as myself, where I can take the time to have a leisurely breakfast and morning routine. Most of you, I know, have little ones or tight travel schedules to get into the office and back on that daily grind (all while trying to avoid the traffic...and bad winter weather!)
I get it. You may not all be early morning (3-4am warriors like myself), but that shouldn’t deter you from getting in some great morning fuel! I also know some of you just aren’t hungry in the morning. My brother is someone who never eats breakfast, but he does love his coffee. To entice all my non-breakfast eating coffee lovers, I have an option I’d like you to try out. Some that has:
1. Lots of healthy fats
2. A sneaky dose of plant-based protein
3. That coffee (caffeine) you know and love
4. A nice tropical coconut undertone
5. Will keep you satisfied for hours
6. Is so quick...bullet quick
Enter...my Vegan Coconut Coffee Breakfast Shake! Whipped up super (duper) bullet quick in the NutriBullet Balance! What if I told you that this breakfast “meal” shake was so easy to make because it was measured, calculated, customized, and tracked all through the NutriBullet Balance and your own smartphone? Sounds like a busy millennial’s dream, right? Let me show you…
I feel like this is a vegan version of “Bulletproof” coffee...taken up a few notches. We have coffee, coconut yogurt, coconut milk, white beans (you DO NOT taste them, aka sneaky protein), sweetener of choice, and some soaked cashews. All measured and tracked right in the NutriBullet Balance app on your smartphone. You can make your own recipes and add them in (having a few go-to favorites is always good!) or use some of the pre-made recipes right on the app. Not just smoothies and shakes either. Soups, sauces, dips, dressings, anything you need blended up!

On a mission to become a little more vegan with my foods, aka switching from skimmed to soya milk, this is definitely something that I am going to try!
Thanks!

Swapping out dairy is the easiest thing in the world, lol.

I'm a big fan of breakfast, though it's rare for me to enjoy a leisurely one. Coconut and coffee is a new one on me, but I can see how the flavours would work.
Rebecca @ Strength and Sunshine
Wow, you need to expand your flavor horizons!
Suzy Turner
Sounds delicious! I just need to find somewhere around here that sells coconut yoghurt. The Algarve isn't the best place for vegan ingredients... yet!
Rebecca @ Strength and Sunshine
Use your favorite yogurt!
Suzy Turner
I shall have to have a look and see what's available! Thanks Rebecca <3

Sounds lovely, and possibly the kind of coffee drink that wouldn't give me crippling stomach cramps. I love coffee but it doesn't love me, so very rarely drink it. This does look fab though!
Rebecca @ Strength and Sunshine
This is an all in one breakfast! Combine your typical coffee with all the nourishment you'd get with normal "food" breakfast!
Sophie
I used my nutribullet every morning to get more iron (I mix spinach, pineapple and coconut water). I love this recipe and will try this in a heartbeat.

Love the addition of beans, they're packed with protein and give food such a creamy texture. The shake sounds delicious.
Rebecca @ Strength and Sunshine
Little bit of protein and carbs, but this is mostly a high healthy fats shake!

Real question here, are you pointing out it is vegan or did you omit an ingredient which would have prevented it from being vegan? I'm always interested to learn more, but never ask. This time I feel like it's okay if I ask! 🙂
Rebecca @ Strength and Sunshine
My blog is 100% Gluten, soy, egg, dairy, and meat (besides chicken and fish) free.

This sounds delicious even though I'm not a big coffee fan. I'm just coming off of a January Whole30 so I'm looking to continue my new habit of trying new things or trying things I used to "hate" again - so I'll probably give this a try!
Rebecca @ Strength and Sunshine
You can never hate coffee 😉 Haha!
Angela
Yummy!
Rebecca @ Strength and Sunshine

Yum, sounds good! I am someone who easily skips breakfast. So to make sure I don't I usually buy some easy foods to eat in the car. Not always healthy though...definitely something to work on! I wonder if they sell nutribullets where I live.
Rebecca @ Strength and Sunshine
A quick shake or smoothie would be a great way to go then!
Angel
This sounds amazing! I love cashews so anything with those in gets my vote. We've been thinking about getting a Nutri-bullet for quite some time. Recipes like these give me a strong case to get one. Quick, delicious and super easy!
Rebecca @ Strength and Sunshine
Well this is the newest NutriBullet to get then!
