I’m so not a lunch person. I live for breakfast, and dinner options are endless, but when it comes to lunch...it’s rather drab. BUT, why don’t we make lunch “cool” again? I know I’m not the only one who wishes for a little something to “spring up” that midday slump at work, school, heck, even at home! I’m always hearing from ya’ll that you want more lunch ideas. That’s the meal that everyone (at some point or another in their lives) gets stuck on.

I think the main reason for that “lunchtime dilemma” is the “we don’t have time for that” syndrome. Especially when you’re gluten-free. I’m always hearing from my mom how she wishes she could eat the catered lunches at work or go grab a slice of pizza. I hear if from you, my fellow celiacs, as well. “What do we pack for lunch?” Now you have to plan something out the day(s) before. You can’t just grab what everyone else is eating. But on those busy weekdays when breakfast is even a struggle to have time for, how could lunch be any easier?

Sandwiches and wraps are always what I think of when I think “lunch”. They’re easy, but not always filling enough. I want something a bit more hearty and fueling for the rest of my day. Something like Minute® Ready to Serve Organic Red Quinoa and Brown Rice with Garlic seemed like a fantastic idea for loading into a lunch wrap. These easy microwavable portioned cups are always a staple in my pantry and with Minute’s new organic varieties this was a no-brainer. Wholesome whole grains that are always flavored and just waiting to solve that “no time” and “no idea” lunch dilemma!

To make all those kids at the lunch table even more jealous, I didn’t stop there. Inside these gluten-free and vegan wraps not only will you find hearty red quinoa and brown rice, but a buffalo tahini spread and fresh, crunchy carrots and romaine! Can you say (spicy) plant power? Since I know you’ll want these wraps more than just once, I made sure the recipe was freezable, storable, and easily transportable! Make a bunch, wrap them in some foil, and freeze for later use throughout the week! Win, win, win!

Ingredients

Scale
  • Per 1 Wrap:
  • 1 Gluten-Free Wrap/Tortilla
  • 1 Minute Ready To Serve Red Quinoa & Brown Rice with Garlic Cup
  • 3 Romaine Leaves (sliced lengthwise)
  • 1-2 Whole Carrots (sliced lengthwise)
  • Buffalo Tahini Spread:
  • 2 TB Tahini
  • 2 Tsp Frank’s Buffalo Sauce

Instructions

  1. Microwave the Minute Ready To Serve Red Quinoa & Brown Rice with Garlic Cup according to package directions.
  2. In a small bowl mix together the tahini and buffalo sauce until combined.
  3. Lay the wrap on a plate and spread the buffalo tahini mixture over the wrap.
  4. On one side of the wrap, layer on the entire quinoa and rice cup, then all the romaine and carrots.
  5. Tightly roll up the wrap (like sushi). You can either wrap the rolled up wrap in plastic wrap for transport, foil for freezing, or just devour on the spot!

I think I just got rid of that midday slump and lunch dilemma! Lunch will be cool again (and easy, and quick, oh and delicious!) I would love to hear what you guys love to whip up for lunch or if you are someone who falls into that “lunch boredom” camp! But trust me on this one, we don’t have to let that happen ever again! Who knew we’d all be looking forward to that 12 o’clock lunch break some much now?

    We live on wraps in Turkey, so easy to make a salad and put into them! Not much selection of food here, though the vegetables and fruit are outstanding and very fresh!

    Tahini combined with a spicy sauce sounds like a wonderful combination. I always look forward to lunch, but don't want to spend too much time on the prep. Making wraps up in a batch and freezing them is the sort of organisation I aspire too.

    Buffalo sauce is my addiction! I do warps for lunch almost every day. Such an easy way to pack in all the veggies. And so easy to throw in whatever! But anything with buffalo has got to be amazing.

    Though I'm not a big fan of tahini.., I love quinoa. People eat quinoa for health reasons, but I eat it because I really really love it. I'm definitely trying these wraps.

    I ALWAYS struggle with what to pack for lunch and being gluten free makes it way harder! Everyone around me is eating sandwiches, soups, and other things and I'm always like I wish I could have that too. I tend to stay away from buying gluten free bread only because it's so expensive (and often tastes like cardboard) but these wraps look delicious so I think I might splurge and get some wraps!
