Shall we enjoy some savory pumpkin fare on this October Monday? There are so many pumpkin pasta recipes out there, but pumpkin is one of those essential key ingredients from some delicious, healthy, (low-calorie) creamy pasta. When I baked this pumpkin bread a few weeks ago, I wasn't sure if I had enough cans of pumpkin in my apartment, so I bought a few extra. Couldn't let those cans go to waste during pumpkin season, no can we?

So this is what I did. Made some quick and easy one-pot pumpkin pasta! One-pot, one-box (pasta), one can (pumpkin). One delicious dish! Alright, there are a few more things in there, but still super easy! Apparently, we are simply spoiled over here in the US. Good old canned pumpkin puree isn't so much of a thing across the pond. A tragedy? They just have to roast and puree themselves I guess....Libby's needs to expand their pumpkin market!

I know we're missing out on some interesting foodie hacks here in the states. That's one reason I want to travel the world one day. The culture around food in every country and region is just so unique! Ever since my trip to that Asian Market, my travel lust has been going strong! That's when the "study abroad" bug tickles its way in...just a bit.

I would never be able to study abroad, but that won't stop me from fantasizing about traveling! I've talked about this before, but the places high on my list include India, Iceland, Italy, Australia, Thailand, Morocco, and California. The most likely one to happen first? California...possibly, haha! This East Coast girl needs to become a bit more of a peripatetic!

Right now, there's not going to be much traveling and this pasta is not very exotic, but at least it's delicious (and could be exotic to someone not in the US!) Delicious and perfect for a Halloween dinner! Can you believe Halloween is on a Monday?! I thought it was going to fall on Sunday, then I go and check and see October 31st is a Monday. Terrible! All those Halloween parties will be on the weekend I presume! Maybe Halloween on a Monday will be a good thing, though? Start the week with a big dose of candy?

This pasta is perfect for a simple autumn dinner or a little Halloween fun. Orange and black with some green in there too! It's creamy and comforting with a nice bite from the olives (they look like eyeballs!), "cheesy" (that hidden nooch!), and a bit deeper than just pumpkin with the addition of some tomato sauce! The green hints come from the chives (my favorite!), parsley, and some damn good green lentil penne! And of course, some sage for that mega-autumn flavor hit!

Ingredients

Scale
  • 1 8oz Box Green Lentil Penne*
  • 1 15oz Can Pure Pumpkin Puree
  • 1 Cup Plain Tomato Sauce
  • ½ Cup Sliced Black Olives (rinsed)
  • ¼ Cup Nutritional Yeast
  • ¼ Cup Chopped Parsley
  • 1 TB Chopped Chives
  • 1 TB Chopped Sage
  • 1 Tsp Minced Garlic

Instructions

  1. Cook the penne according to directions, drain, rinse, and add it back to the pot.
  2. Add the all the other ingredients into the pot of cooked and drained pasta and mix well.

Notes

*You can swap this with any gluten-free penne of choice.

My non-exotic, but a bit strange, Halloween pasta recipe! It was so yummy even though it didn't take my taste buds on any exotic journies! Sometimes we just need some good old comforting, but still super flavorful food! I'm pretty set with my pasta journies for now 😉

    You're right, it does sound exotic to me over here in the UK! I love the flavours you've put together and I have to say it would never have occurred to me to have pumpkin in a pasta dish. I'd love to try your pasta though!

    "That’s one reason I want to travel the world one day." I had the opportunity to study abroad when I was in University and didn't take it. Honestly - I don't regret it at all. I was most comfortable where I was and now several years later, I have some good travel under my belt. You will too! And be sure to drop me a note when you do get out to California, I'll show you around =)

    First off, that pasta looks so delish. It's chilly and damp here, that would be the perfect dinner.

    Second, I've only been to Mexico and Canada outside the USA and since I love any type of Mexican food I was in heaven! Had a little bit of everything. Fish, seafood, and anything cheesy. It was delish. Lived in California for a bit, it was so gorgeous. The ocean is my goal for the future. The waves are so calming.

    This looks like a fantastic one pot pasta dish Rebecca!

    And you know I love my one pot pasta dishes.

    We can get Libby's Pumpkin Puree here in Scotland, but it costs £2.00 a can cheapest (currently $2.45 a can) and when I went to look online just now at a local national supermarket, it was unavailable.

    You guys must have used it all up! 😉

    I'll have to pin this for when we re-stock! 😆

      There was a pumpkin shortage last year....we do tend to go a bit crazy :O Let's hope there is some for Thanksgiving! I need to make pie!

    That green lentil pasta is SO good! Easily my favorite gluten-free pasta ???? I love the ingredients you chose here - especially the olives! Looks like a perfect fall-weather dish. Hmmmm, that's a tough question? I've never been outside of the U.S. so my travel wish list is very long. However, my top three favorite travel spots are Hawaii, Vermont, and the Oregon Coast ❤️

    Yay for pumpkin pasta! I made a creamy pumpkin alfredo sauce last week and the hubby loved it! I should probably share it on the blog before the pumpkin season is over. I love the addition of black olives in your recipe. SO good!

    Perfect seasonal meal! After coming back from Italy, while I'm very grateful for the food we have here, I'd like fresh basil and herbs all the time! We drove by so many fields of fresh crops too. Going back to California (and the Pacific Northwest) is high on my list. I just love that area. But I want to go to Iceland too 🙂
