When a recipe calls for a box of Jiffy corn muffin mix, but you're gluten-free, what do you do? My friends, I have the solution! This DIY gluten-free copycat Jiffy corn muffin mix is just what you need to solve that dilemma! From a small batch of corn muffins, a quick skillet of cornbread, even some Southern corn casserole or pudding, have this homemade mix ready to go in your pantry and you'll have your favorite corny comfort foods on the table in minutes!

What's The Difference Between Jiffy Corn Muffin Mix and Jiffy Cornbread Mix?

Let's set the record straight. There is no such thing as Jiffy Cornbread Mix. Zero, zilch, nada. Jiffy only makes Corn Muffin Mixes (and other baking mixes) but no cornbread mix. You can use the corn muffin mix for cornbread, but it's not an actual product you will ever find on the shelves. However, they do make a few versions of their corn muffin mix. A classic version, a vegetarian version, and a honey version.

Is Vegetarian Jiffy Mix Vegan?

Yes, the vegetarian box (with the green label) is vegan as well. It replaces the lard in the classic mix with vegetable oil (which also contains soy).

Is Jiffy Gluten-Free?

No, there are no gluten-free versions of Jiffy mix. They all contain wheat flour.

What Is Jiffy Baking Mix?

Jiffy does make an all-purpose baking mix. This mix does not contain cornmeal and can be used for any general baking recipe. It is not gluten-free or vegan.

Is Bisquick The Same As Jiffy?

Bisquick and Jiffy's all-purpose baking mixes are similar, but Bisquick only contains flour, oil, starch, sugar, salt, and leavening ingredients. Jiffy contains flour, starch shortening, buttermilk, sugar, salt, and leavening ingredients. The shortening and dried buttermilk give Jiffy products a slightly different taste and texture. However, Bisquick does have a gluten-free version of their baking mix which is also vegan and allergen-free!

Ingredients For Gluten-Free Jiffy Corn Muffin Mix

  • Gluten-Free All-Purpose Flour: Your favorite all-purpose gluten-free flour will be the base of this recipe and replace the wheat flour in the classic Jiffy mix.
  • Yellow Cornmeal: A medium grind, coarse yellow cornmeal is what will make this a CORN muffin mix!
  • Baking Powder: The baking powder acts as the leavening ingredient needed for this self-rising flour mix to rise!
  • Granulated Sweetener: You can use a sugar-free sweetener like Swerve or any granulated sugar you'd like. This gives the mix a simple, subtle sweetness.
  • Salt: A pinch of salt to make this mix flavorful and help with leavening.
  • Oil: The neutral-flavored oil in the pre-made mix is optional, but you'll need to remember to use it for certain recipes like making muffins. It keeps the mix moist along with the non-dairy milk and egg replacement you will need for standard Jiffy recipes. Adding it to the mix is fine though and takes out a step later on!

Additional Ingredients Needed For Baking Recipes

  • Egg Replacement: You can use a simple flax egg or commercial egg replacement like Bob Red Mill to make gluten-free and vegan Jiffy corn muffins.
  • Non-Dairy Milk: Unsweetened non-dairy milk of your choice will be the liquid needed for standard Jiffy recipes.

How To Make Gluten-Free Copycat Jiffy Mix From Scratch

  1. Simply add all your ingredients to a large mixing bowl, except the oil, and whisk together.
  2. Add the oil now, if preferred, and mix it into the dry ingredients until there are no lumps.
  3. Store in an airtight jar or sealed plastic bag in a cool, dry place until ready to use.

Ingredients

Scale
  • ⅔ Cup Gluten-Free All-Purpose Flour
  • ⅔ Cup Coarse Yellow Cornmeal
  • 2 Tsp Baking Powder
  • 2 TB  Granulated Sweetener (or preferred granulated sugar)
  • ½ Tsp Salt
  • 2 TB Neutral-Flavored Oil

Instructions

  1. Add all dry ingredients to a large mixing bowl and whisk together.
  2. Add the 2 tablespoons of oil and mix into the whisked flour mixture until smooth and lump-free.

For Corn Muffins:

  1. Preheat the oven to 400°F. Combine the gluten-free Jiffy mix with 1 egg replacement and ⅓ cup unsweetened non-dairy milk. Mix the batter until smooth. Fill muffin tins about ⅔ full and bake for 15-20 minutes until golden brown. (Makes 6 Corn Muffins)

For Cornbread:

  1. Preheat the oven to 400°F. Combine the gluten-free Jiffy mix with 1 egg replacement and ⅓ cup unsweetened non-dairy milk. Mix the batter until smooth. Pour the batter into a greased 8x8 inch square baking pan. Bake for 20-25 minutes until golden brown.

Notes

  • This mix yields 1 ½ cups of corn muffin mix or an 8.5-ounce box of Jiffy Corn Muffin Mix.
  • Use this gluten-free mix in any recipe that calls for Jiffy Corn Muffin Mix.
  • Store your homemade mix in an airtight container or sealed plastic bags in a cool dry place for 3-4 months.

    Wonderful taste! I used the feature to double the recipe, which called for 2/3 c of milk. When using that amount, the consistency was more like cookie dough than corn muffin batter. I added another 2/3 and the muffins turned out well, though a bit more milk likely would have been just a bit better. Just checking to see if the 2/3 c of milk is intended to be the correct amount for 2x the recipe. Thanks!

    This is the best GF/Vegan cornbread I’ve tried so far!! I added a can of cream corn and a tb of melted vegan butter in place of 1 of the tb of oil. Threw in some jalapeños and it was delicious!!!

    The oil goes in the dry part of the ingredients and is safe to keep without refrigeration, as one of the six ingredients? Just wondering. Thank you! I am delighted with this because I can no longer eat rice.

      Yes. Oil is kept at room temperature. I hope you're not storing bottles of oil in your fridge!
