Peanut Butter Puff Granola

A sweet peanut butter puff granola without the peanut butter! Gluten-free, vegan, and sugar-free, this healthy granola recipe is full of peanut protein to fuel your morning or give your afternoon snack a satisfying protein punch!

That's it. There is no more delaying these granola posts! You get TWO this week. This one is super fun too and I've had it in the pile for months! First of all, it's granola. Second, it's all peanut butter inspired (without actual peanut butter!). I know, crazy! But don't worry, there is so much more peanut-goodness going on in this granola!

Don't worry, I am not a peanut butter hater in the least! It is the most classic and essential nut butter to all our lives! Cinnamon raisin peanut butter will probably always be my number favorite! All good things combined! But I didn't have a jar of plain peanut butter on hand when I made this and I wanted it to be less "calorie dense" since granola can get heavy if you aren't careful. So instead, I used...peanut flour! Funny thing is right now I am stocked UP on peanut butter! I got a surprise 6-pack from Peanut Butter & Co. and a huge jar of Teddie Peanut Butter (so good! Plain creamy and I mix in a bunch of cinnamon...obsession!)

Yes! We all know I also love peanut flour. So why not use that essential, that I always have in my fridge, in place of real peanut butter? I don't see why not...so I did! Let me tell you, it was delicious too! And what I thought would be fun for this granola was to make it puffy! Like the cereal? Even though I don't even know if I've ever had it, so maybe just the alliteration of peanut butter puff sounded appealing? All I know is I went with the idea and rolled!

What is in this granola? How about oats, puffed corn, roasted peanuts, peanut flour, and some sweet goodness for flavor! It is gluten-free, vegan, sugar-free, soy-free, and wonderful. Just how granola should be right? You can make it as sweet as you want by adding more or less stevia syrup. I kept it less sweet and it was perfect for topping anything or adding to a bowl of plain cereal!

Ingredients: (makes about 5 cups)

+ 2 Cups Gluten-Free Rolled Oats

+ 2 Cups Puffed Corn

+ 1 Cup Roasted PeanutsΒ  (I used unsalted)

+ ΒΌ Cup Peanut FlourΒ (mixed with β…“ cup of water)

+ Β½ Tsp Pure Madagascar Bourbon Vanilla Extract

+ 1 Β½ TB Simple Stevia Syrup

+ 1 Tsp Cinnamon

Directions:

+ Preheat the oven to 350ΒΊF.

+ In a large mixing bowl, combine the oats puffed corn, and peanuts. Give it all a good mix.

+ Then in a small bowl, combine the peanut flour and the water, mix together, and pour into the oat mixture.

+ Add the rest of the flavoring: stevia, vanilla, and cinnamon. Give everything a good mix and make sure it is all coated.

+ Spread evenly on a baking pan covered in parchment, and bake for 25-30 minutes, stirring every 10 minutes.

+ Allow to cool completely before storing in an air tight jar.

Simple, healthy, and full of peanutty-goodness! Peanuts get so much flack, but they really are great (as long as you aren't allergic!) The one thing I'm NOT allergic too πŸ˜› So if you are good to go on peanuts, then make this granola stat!

    Re: two granolas in one week -- how do you choose which one to have in the morning? πŸ™‚ I'd have such a hard time picking...

    I love peanut butter everything. Flavored, unflavored. Just give me a spoon and I'm good... {better be my special spoon though, as you know πŸ˜‰ }. I actually feel this way about most nut and seed butters. I love pb flour too.

    As for allergies -- I'm personally off and on with being sensitive to pb, but don't have an official allergy {just have to take occasional breaks -- thank goodness for sunbutter at those times πŸ˜‰ }. I do know a few people with pb allergies now though, and had two close friends growing up who unfortunately had a serious allergy. For one of them, if you even breathed pb breath in his face, his face would swell up. It was intense!

      Peanut allergies can be so dangerous! I think it's so "cool" how they can train dogs to be the person's extra "nose" and keep them safe! So horrible, but at least there can be some small safeguards!
      And yes...thank goodness for all the seed butters! Sunflower butter will always have my heart!

    This looks delicious. I bought some peanut butter powder from myoatmeal.com which is pretty much the same as peanut flour. It is really good, especially when you don't have peanut butter on hand. It'e great in oatmeal too

      Yup! When I don't have my authentic peanut flour (from protein plus), I use either Crazy Richard's peanut powder or MyOatmeal PBLean (but that's usually flavored so..)

    This sounds so good! I love peanut butter. I do know one person with a peanut allergy, it's incredible the places that you find nut products. I'm constantly surprised by the strange places I find things like soy, gluten, nut and fish "products" (for lack of a better term).

    If I substituted puffed rice cereal my mom would eat the entire bowl. She used to eat a bowl of puffed rice with berries every night when I was a kid. She's 83 and a little teeny, tiny thing. Maybe she found the secret to a long, skinny life? πŸ™‚

    This recipe looks just gorgeous πŸ™‚ I have just managed to find some corn puffs (they're quite hard to get hold of in the UK - there are honey-sweetened ones, but plain ones are really rare, so I was really happy to locate them!) so I'm definitely going to make this. I hate oily, high-fat granola, so this one looks perfect.

    I love peanut flour. I think I've probably eaten more peanut flour in the last three years than any other human on the planet πŸ˜‰ I'm not keen on nut butters as they tend to be a bit of a trigger food for me, but if I had to choose I'd definitely go for the plain ones: the flavored are always too sweet.

    Thanks so much for creating and posting such a fab recipe.

    I love the puffy aspect, that's really drawing me in! Most granola's are so dense and unpuffy. It kind of reminds me of the Peanut Butter Puffins Cereal from Barbara's Bakery πŸ™‚

    This is probably a silly question, Rebecca, but is there much difference between gluten free oats and normal oats? I love the taste of oats, but my stomach HATES them. It hurts even eating them! I don't have this bad a reaction to anything else, honestly. But I'd be willing to try the GF ones if it may make a difference!

      Most oats are milled in the same place and grown in the same fields as wheat. Thus for people with Celiac, we need certified gluten-free oats, meaning that during processing they are done in a dedicated plant, free of gluten. However, the protein in oats is similar to gluten (NOT the same though), but can be rough of the tummy. I still have problems with oats myself if I over do it. Some Celiacs can't even tolerate them at all!

    I've always been a granola lover, but sometimes shy away from it because of the calories, etc. This looks like the perfect granola to try. I've never used peanut flour before so this should be interesting. Looks yummy!
