A sweet peanut butter puff granola without the peanut butter! Gluten-free, vegan, and sugar-free, this healthy granola recipe is full of peanut protein to fuel your morning or give your afternoon snack a satisfying protein punch!
That's it. There is no more delaying these granola posts! You get TWO this week. This one is super fun too and I've had it in the pile for months! First of all, it's granola. Second, it's all peanut butter inspired (without actual peanut butter!). I know, crazy! But don't worry, there is so much more peanut-goodness going on in this granola!
Don't worry, I am not a peanut butter hater in the least! It is the most classic and essential nut butter to all our lives! Cinnamon raisin peanut butter will probably always be my number favorite! All good things combined! But I didn't have a jar of plain peanut butter on hand when I made this and I wanted it to be less "calorie dense" since granola can get heavy if you aren't careful. So instead, I used...peanut flour! Funny thing is right now I am stocked UP on peanut butter! I got a surprise 6-pack from Peanut Butter & Co. and a huge jar of Teddie Peanut Butter (so good! Plain creamy and I mix in a bunch of cinnamon...obsession!)
Yes! We all know I also love peanut flour. So why not use that essential, that I always have in my fridge, in place of real peanut butter? I don't see why not...so I did! Let me tell you, it was delicious too! And what I thought would be fun for this granola was to make it puffy! Like the cereal? Even though I don't even know if I've ever had it, so maybe just the alliteration of peanut butter puff sounded appealing? All I know is I went with the idea and rolled!
What is in this granola? How about oats, puffed corn, roasted peanuts, peanut flour, and some sweet goodness for flavor! It is gluten-free, vegan, sugar-free, soy-free, and wonderful. Just how granola should be right? You can make it as sweet as you want by adding more or less stevia syrup. I kept it less sweet and it was perfect for topping anything or adding to a bowl of plain cereal!
Peanut Butter Puff Granola
Ingredients: (makes about 5 cups)
+ 2 Cups Gluten-Free Rolled Oats
+ 2 Cups Puffed Corn
+ 1 Cup Roasted Peanuts (I used unsalted)
+ ¼ Cup Peanut Flour (mixed with ⅓ cup of water)
+ ½ Tsp Pure Madagascar Bourbon Vanilla Extract
+ 1 ½ TB Simple Stevia Syrup
+ 1 Tsp Cinnamon
Directions:
+ Preheat the oven to 350ºF.
+ In a large mixing bowl, combine the oats puffed corn, and peanuts. Give it all a good mix.
+ Then in a small bowl, combine the peanut flour and the water, mix together, and pour into the oat mixture.
+ Add the rest of the flavoring: stevia, vanilla, and cinnamon. Give everything a good mix and make sure it is all coated.
+ Spread evenly on a baking pan covered in parchment, and bake for 25-30 minutes, stirring every 10 minutes.
+ Allow to cool completely before storing in an air tight jar.
Simple, healthy, and full of peanutty-goodness! Peanuts get so much flack, but they really are great (as long as you aren't allergic!) The one thing I'm NOT allergic too 😛 So if you are good to go on peanuts, then make this granola stat!
So tell me:
+ Do you like plain nut butter or flavored more? I really don't care! I love them all!
+ Do you know someone with a severe peanut allergy? I actually don't think I do! Crazy since it's so common!

Re: two granolas in one week -- how do you choose which one to have in the morning? 🙂 I'd have such a hard time picking...
I love peanut butter everything. Flavored, unflavored. Just give me a spoon and I'm good... {better be my special spoon though, as you know 😉 }. I actually feel this way about most nut and seed butters. I love pb flour too.
As for allergies -- I'm personally off and on with being sensitive to pb, but don't have an official allergy {just have to take occasional breaks -- thank goodness for sunbutter at those times 😉 }. I do know a few people with pb allergies now though, and had two close friends growing up who unfortunately had a serious allergy. For one of them, if you even breathed pb breath in his face, his face would swell up. It was intense!
Rebecca @ Strength and Sunshine
Haha 😉
Peanut allergies can be so dangerous! I think it's so "cool" how they can train dogs to be the person's extra "nose" and keep them safe! So horrible, but at least there can be some small safeguards!
And yes...thank goodness for all the seed butters! Sunflower butter will always have my heart!
Meg @ The Housewife in Training Files
Oh how I love this! I make a peanut butter cup granola with peanut flour. Seriously, its genius! And I love how you added puffs here. Definitely making my next go around!
Rebecca @ Strength and Sunshine
You can never go wrong with PB!

Looks so yum, and how smart to use peanut flour!! I am a huge fan of PB&Co too, but haven't tried Teddie Peanut Butter. Will be on the lookout now!
Rebecca @ Strength and Sunshine
Teddie is so good! I will be buying that one again!
Melanie @ Nutritious Eats
I just want to reach in and grab one of those peanuts! 🙂
Rebecca @ Strength and Sunshine
Hahaha 😉 Peanut love!

I notice you use a lot of Stevia. I don't know much about it. Can you tell me some of the benefits and what you like about it? I would eat this granola by the handful!
Rebecca @ Strength and Sunshine
It is just wonderful!
Nicky
This looks delicious. I bought some peanut butter powder from myoatmeal.com which is pretty much the same as peanut flour. It is really good, especially when you don't have peanut butter on hand. It'e great in oatmeal too
Rebecca @ Strength and Sunshine
Yup! When I don't have my authentic peanut flour (from protein plus), I use either Crazy Richard's peanut powder or MyOatmeal PBLean (but that's usually flavored so..)
Kimberly Ann @ Bake Love Give
Now this is my kind of granola - so creative!
Rebecca @ Strength and Sunshine
Thanks Kimberly Ann!
Lacey @ Runs and Roses
Yummy! I'm more of a plain peanut/almond butter kinda girl, I love the simple nutty flavor!
Rebecca @ Strength and Sunshine
And the plain ones just so perfect with EVERYTHING!
Nikki Vergakes
That would be perfect with yogurt!
Rebecca @ Strength and Sunshine
Or...anything! Hahahaha! 😉

Granola is the most fun to bake!
Ah, yes! I am too!
Christine @ Love, Life, Surf
This looks delicious and makes me wish that I wasn't allergic to peanuts! You are making want to make a batch of granola now!
Rebecca @ Strength and Sunshine
Ah! 🙁 Well then you can just make my Strawberry Mocha Granola!
Alyssa @ Simply Quinoa
Like I said in my Facebook comment, gurrrl you've got me with this one! I'm not only obsessed with peanut butter, but I have a serious love affair with granola. Can't wait to make this!
Rebecca @ Strength and Sunshine
Haha! I know! I need to make this obsession again! Although I have to many other flavor combos brewing in my head to try!
Christy@SweetandSavoring
I love everything peanut buttery! My favorite is chocolate peanut butter cup ice cream 🙂 And I've been meaning to make my own granola for awhile; this is the perfect motivation!
Rebecca @ Strength and Sunshine
Mmmm and I would say...sneak come chocolate chips in here too 😉 You may just LOVE that! Haha!
genevieve @ gratitude & greens
Plain nut butter all the way! As long as it's crunchy 😉 This granola sounds super tasty, I love everything and anything that tastes like nut butter!
Rebecca @ Strength and Sunshine
Ah crunchy girl! I like both..but I think I like crunchy more too!
Alex Caspero MA,RD (@delishknowledge)
Anything with peanut butter, I am down with! Love this combo!

Emily @SinfulNutrition
Girl, you had me at peanut butter. I'm ready for a giant bowl of this 🙂
Rebecca @ Strength and Sunshine
Haha! Yes 😉
Michele @ paleorunningmomma
Great idea for a homemade version of puffed cereal that everyone loves! I also love baking on parchment and I'm sure it helps the "puff" in this.
Rebecca @ Strength and Sunshine
Parchment just makes every thing so much easier 😉
lindsay
puffed corn! genius! i better it's 10x better than corn pops
Rebecca @ Strength and Sunshine
Like 1000000000x better 😉 Hahaha! XOXO
HeidiDee @ Beauty by HeidiDee
Wow that looks amazing! Now I'm going to have to try peanut flour out. We're all huge peanut and almond butter fans in my house!
Rebecca @ Strength and Sunshine
Wooohooo! Nut butter love!
Brooke @ Silver LIning
Never had puffed corn before (have I?), but I'm all about popcorn, and it looks similar, so I'm on board! And I love the idea of combining it with the sweet peanut butter taste!
Rebecca @ Strength and Sunshine
Haha, well it tastes like corn so 😉 You are golden!
Dietitian Jess
I definitely don't discriminate amongst nut butters (reading your post reminded me that I havent bought a flavored one in awhile and need to asap!). Unfortunately my godson is allergic to peanuts (well all nuts, and a few other things). He gets to enjoy sunbutter though
Rebecca @ Strength and Sunshine
Sunflower seed butter is SOOO good! I MUST always have it in the fridge! I love hemp seed butter too! He isn't missing out on too much 😉
Rachel
This sounds so good! I love peanut butter. I do know one person with a peanut allergy, it's incredible the places that you find nut products. I'm constantly surprised by the strange places I find things like soy, gluten, nut and fish "products" (for lack of a better term).
Rebecca @ Strength and Sunshine
That's why the allergens are so dangerous for so many of us! We always have to stay vigilant!
gretchen | kumquat
this sounds delightful... and that puffed corn, there's never enough! YUM! such a fun recipe.
Rebecca @ Strength and Sunshine
Haha, o yes! Thank you Gretchen!
Sonali- The Foodie Physician
PB + granola = awesomeness! This looks so great, pinning now!
Rebecca @ Strength and Sunshine
Thank you! 🙂
Hannah @ CleanEatingVeggieGirl
I am on board with anything that involves peanut butter!! 😉 I love that you used puffed corn in this. I bet it would also be awesome with puffed kamut!
Rebecca @ Strength and Sunshine
Haha, no 😉 That's not Celiac friendly, haha!
Hannah @ CleanEatingVeggieGirl
Bah... duh!! It'd work for me though 😉
Alisa @ Go Dairy Free
I love the puffs, the peanut butter, the cinnamon - I just need to make this recipe!
Rebecca @ Strength and Sunshine
Yes! Yes you do!
Linda @ Veganosity
If I substituted puffed rice cereal my mom would eat the entire bowl. She used to eat a bowl of puffed rice with berries every night when I was a kid. She's 83 and a little teeny, tiny thing. Maybe she found the secret to a long, skinny life? 🙂
This looks so good, and I love the idea of using peanut flour.
Rebecca @ Strength and Sunshine
I love all puffed grains! I either put corn, millet, or rice in all my granolas 😛
Sam @ PancakeWarriors
Yum this is like a grown up version of Captain Crunch. i'm going to have to try this ASAP!! Thanks for sharing
Rebecca @ Strength and Sunshine
Haha, o my gosh! You're right!
Jess
This recipe looks just gorgeous 🙂 I have just managed to find some corn puffs (they're quite hard to get hold of in the UK - there are honey-sweetened ones, but plain ones are really rare, so I was really happy to locate them!) so I'm definitely going to make this. I hate oily, high-fat granola, so this one looks perfect.
I love peanut flour. I think I've probably eaten more peanut flour in the last three years than any other human on the planet 😉 I'm not keen on nut butters as they tend to be a bit of a trigger food for me, but if I had to choose I'd definitely go for the plain ones: the flavored are always too sweet.
Thanks so much for creating and posting such a fab recipe.
Rebecca @ Strength and Sunshine
Awesome! I hope you do get to make it then!
Give me any nut butter and I'll eat it 😉 I also love making my own though too when I have the time! Totally customizable for the sweetness then!
Alanna
Peanut butter + granola = I'm in. I've been loving peanut butter granola lately, it's just perfection! I've never actually used peanut flour before but now you have me tempted. Recipe looks delicious!
Rebecca @ Strength and Sunshine
When you combine two great things....perfection just happens!
Yes! Get yourself some peanut flour! So good and FUN!
Cassie
I love just plain PB! My bf's sister made caramel peanut butter around Christmas though and it was addictive!
Rebecca @ Strength and Sunshine
That sounds crazy good 😉
Annmarie
PINNED! Can't wait to make it! 🙂
Rebecca @ Strength and Sunshine
Woohoo! You know your weekend task then! 😉
Lindsay @ The Lean Green Bean
this looks fab! LOVE the idea of adding puffs. I always like some kind of cereal in my trailmix/granola to vary the texture a little bit!
Rebecca @ Strength and Sunshine
It is just such a fun easy way to "bulk" it up and make it more sustaining!
Jessica H.
This sounds and looks really good! It would be great to snack on when I want something sweet. 🙂
Rebecca @ Strength and Sunshine
Sweet, savory, and crunchy 😉
Natalie @ Feasting on Fruit
I love the puffy aspect, that's really drawing me in! Most granola's are so dense and unpuffy. It kind of reminds me of the Peanut Butter Puffins Cereal from Barbara's Bakery 🙂
Rebecca @ Strength and Sunshine
I get so angry with Barbara's! They only make the multi-grain and the honey rice gluten-free.....DAMN YOU PUFFINS! I've even sent them emails complaining! Hahaha!
Christine Gallagher
This does look good and I love peanuts, oh I don't strangely don't know anyone with a peanut allergy either lol weird
Rebecca @ Strength and Sunshine
Haha! Right? I obviously know so much about food allergies, but I don't personally know anyone with said peanut allergy! (Guess that's a good thing!)
Tina muir
Oh Rebecca, this could be dangerous, I LOVVVVEE granola, and with peanut butter and crunch in there, that is my kinda breakfast! Thank you for sharing....although I may not be thanking you if I eat the entire batch 😉
Rebecca @ Strength and Sunshine
Hahahaha! It was dangerous for me too 😉 Two of the greats....no shame!
Emily @My Healthyish Life
I just ordered some Wild Friends sun butter and I can't wait to try it. But I will always always be a plain PB girl.
Rebecca @ Strength and Sunshine
You will love all and every Wild Friends flavor! They make some damn good quality product, hahaha!
AJ @ NutriFitMama
I am totally down for this one too. I might as well make it when I make your Strawberry Mocha Granola. 😉
Rebecca @ Strength and Sunshine
Might as well just make a new batch everyday 😉 Make it part of the morning routine! Haha!
jess meddows
This is probably a silly question, Rebecca, but is there much difference between gluten free oats and normal oats? I love the taste of oats, but my stomach HATES them. It hurts even eating them! I don't have this bad a reaction to anything else, honestly. But I'd be willing to try the GF ones if it may make a difference!
Rebecca @ Strength and Sunshine
Most oats are milled in the same place and grown in the same fields as wheat. Thus for people with Celiac, we need certified gluten-free oats, meaning that during processing they are done in a dedicated plant, free of gluten. However, the protein in oats is similar to gluten (NOT the same though), but can be rough of the tummy. I still have problems with oats myself if I over do it. Some Celiacs can't even tolerate them at all!
Alli
I've always been a granola lover, but sometimes shy away from it because of the calories, etc. This looks like the perfect granola to try. I've never used peanut flour before so this should be interesting. Looks yummy!
Rebecca @ Strength and Sunshine
Peanut flour is so great! Add it to anything and you have peanut love!
Kelly
You had me at peanut butter! This looks AMAZING! Great flavor combo!
Rebecca @ Strength and Sunshine
Haha, thank you!!!
Carla
this is SUCH A GREAT IDEA.
my girl is a peanut addict and has to bring a snack each day to school.
<3
sharing.
Rebecca @ Strength and Sunshine
This is perfect then! Love us peanut addicts 😉
