Garlic Kale Hummus

There are so many ways to use hummus, it's not just a dip! This Garlic Kale Hummus is the perfect healthy flavor enhancer for any dish! Gluten-free, vegan, and packed with nutrition and flavor, you'll be adding this hummus to all your meals!

It feels like I just posted for the Recipe ReDux! I do really love these monthly "challenge" themes! I'm stretching the theme a bit this month, but again, I'm working as best I can with the recipes I had made and photographed from home! A few more weeks and I can actually get back in the kitchen and working again! The list of recipe ideas I have is crazy and I can't wait to start crossing them off! Ah!

March's Theme -Β We’re all about cooking once and eating twice. In short, double dinners are better. Show us how you take a favorite recipe already on your blog – and ReDux the leftovers into a new dish. Or, whip up a new healthy recipe and give suggestions on how to make it a second meal. For example, slow cooker pot roast could become shredded beef tacos; or grilled chicken breasts might morph into chicken salad.

Since I last shared about my undieing love for hummus (including the history and what authentic hummus is), I've been waiting to share this awesome flavor combo with you too. First of all, everyone loves a recipe that sneaks in some extra greens and people seem to love garlic. This isn't an overpowering garlic flavor though, I personally only like a touch of the flavor, unless it's black garlic! I'll take loads of black garlic any day!

Besides the great and green flavor and color of this simple hummus, it can be used for just about anything. Hummus is just so versatile! So not only does it fit the March theme of two for one, but more like 80 for one! Haha! So let's list the many ways you can use hummus!

Dip (the obvious!)

Spread (for sandwiches!)

Pizza "Sauce"

Mix into pastas for a nice creamy sauce

Bake it into casseroles

Coat chicken or fish with it

Mix it into dinner bowls

Use it in place of mayo

Endless....

So you totally can get a ton of uses for the ever humble hummus! You can even use it to stuff mushrooms with! (My favorite recipe!)

Garlic Kale Hummus

Ingredients: (makes about 2 heaping cups)

+ 2 Cups Cooked Chickpeas

+ 1 Cup Torn and Washed Kale

+ Β½ Tsp Fresh Chopped Garlic

+ Β½ Tsp Onion Powder

+ ΒΌ Tsp Black Pepper

+ ΒΌ Cup Water

Directions:

+ Place the chickpeas, kale, spices, and water into a food processor (or blender).

+ Pulse and blend until smooth! Then let chill in the fridge and store in an airtight container for about 1 week. It's also very easily freezable by placing flat in a plastic bag!

I'm convinced that if everyone ate hummus and always had it in the house, the world would be a better place! It's so healthy, easy to make, versatile with it's endless uses, so yummy, the perfect food for gatherings and parties with provokes happiness, and simply for that fact that...it's HUMMUS!

    I just planted kale in my garden. I can't wait to star harvesting. We love it here, but I'm always looking for new ways to use up the abundance I get from the garden. Hummus and garlic are two of our favorites too so this recipe just makes sense!

    This sounds amazing, Rebecca. I love making fancy hummus -- never tried it with kale yet, but it looks very scrumptious! Favorite way to eat hummus? Probably ANY WAY πŸ™‚ I usually have it as a side to my salad, or dip some carrots into it, or just eat it with a spoon... Anything in a jar in my kitchen is in danger of being eaten up with a spoon straight out of the jar πŸ™‚

    I make a big batch of black beans and rice... then use the black beans for other recipes like burritos or quesadillas.

    I looooove simple recipes like these.

    Hummus forms a major part of my diet. It's filling and delicious and a great source of plant-bsed calcium. So a winner all around right?

    Looks great! I love that you don't use tahini in this recipe, as we have a sesame allergy in the house. Great idea to add kale to it for a little nutritional boost, also. My kids will never guess ;-).

    I love the flavor combo here and wouldn't have paired kale with hummus but you always find ways to be deliciously creative πŸ™‚ I think my favorite thing to have leftovers for is roasted chicken. I use the meat for chicken salad or hash and the bones can be used for broth. Also homemade mayo I just use with everything πŸ™‚

    I loooove hummus, but have never been too inventive with it - love this garlic & kale version! I usually use hummus on sandwiches, toast, as a dip with vegetables or crackers...and if I have some to spare I throw it in dinner (I make an awesome cannelloni stuffed with roast vegetables and hummus...mmm).

    I love making things that are really versatile to use in multiple things, and its so much better to make your own, rather than store bought.     UM...I don't like kale by itself (it's too peppery or sharp for me), but as hummus?! WOW. That looks seriously delish!
