The Super Bowl is just around the corner and we all know that means some killer snacks and appetizers are in order! Personally, I'm not a snacker and if I am going to have an appetizer, it better well be healthy and nutritious! One thing that's always important to have is some fantastic dips!

Lucky for you, I'm partnering with Peapod again to bring you a super (pun on intended) easy recipe to bring to Sunday's big game! I know that when you're planning a party or gathering at your house, the last thing on your mind is getting the groceries you need at the store. You're probably going "cleaning crazy" (at least, that's how it is at my house!). Peapod gives us the perfect solution for that! This Red Lentil Nacho Dip is going to be the perfect addition to your Super Bowl Sunday too! Red lentils cook up SO fast, literally 5 minutes, and then you just toss the mixture in a blender, add salsa, spices and herbs, and of course, the nutritional yeast for our favorite dairy-free "cheesey" flavor! This nacho dip comes out so creamy and tastes exactly live a big ole' nacho platter! Just grab your favorite corn chips and start dipping!

You can have your "nachos" and your dip all in one! Even if your team doesn't win this weekend, at least you have a "winning" dip. We all know the food is what matters at these events anyway! Now, let's order our ingredients for this Red lentil Nacho Dip and whip some up! It won't last long, but at least it's easy to make over and over again!

Your favorite Mexican appetizer, now as a dip! A creamy Red Lentil Nacho Dip that's allergy-free, gluten-free, and vegan! A perfect recipe for parties or everyday snacking! Easy to make and delicious to eat!

Ingredients

Scale
  • 2 Cups Red Lentils
  • ½ Cup Salsa (use your favorite)
  • ½ Cup Chopped Fresh Parsley
  • ¼ Cup Nutritional Yeast
  • ½ Tsp Minced Garlic
  • ½ Tsp Onion Powder
  • Serve with your favorite Corn Chips

Instructions

  1. In a large pot, bring about 4 cups of water to a boil with the red lentils, reduce to low heat, and cook covered until water is absorbed (or following package directions) and the lentils turn into a creamy "soup".
  2. Now add the cooked lentils to a large food processor with all the other ingredients. Blend until creamy and smooth.

I don't know about you, but I'm not waiting until Sunday to devour this dip! While I go whip some up (and urge you to do the same), I'll leave you with this contemplative question I've been pondering while writing this post...do you consider nachos a snack, appetizer, or mini meal?

So tell me:

+ Nachos are...? I'd say an appetizer, but "loaded" nachos are totally a full on meal!

    This does sound like a super snack for Game Day! I'm sure we will have nachos as well, I love eating them loaded and layered as a meal but most of the time, we are snacking on them with some type of dip.
