One of the first recipes I knew I had to make when I got my baby cast iron skillet this past Christmas was the ever-drool-worthy skillet brownie! I guess I'm starting a Christmas tradition of getting a new addition to the cast iron family every year! (That's one I want to keep!) But I chose to share this double chocolate skillet brownie today for one special reason that almost feels like Christmas. Can you guess?

We are free for the summer! Today is my last final for the semester and then I'll be a free woman again! Gluten-free vegan brownie in a lil' skillet is just the celebratory treat I need! The thing I loved most about baking this brownie in a cast iron skillet was just how easy it was to mix, pour, bake, and then grab a spoon and literally dive in! It seems like a metaphorical soft-baked chocolate pool to me! The skillet is the pool lining, the brownie is the water, the spoon is the diver, and YOU choose how fast you jump 😉

And why is it double chocolate? We added chocolate chips of course! Now the pool party can get started! Melty chocolate chip blobs all throughout the soft chocolate cake! When you eat this warm right out of the oven (topped with some rice whip, vegan ice cream, or marshmallow fluff) you will be floating on a dreamy raft in chocolate island paradise! I know I'm ready for a cocoa vacation!

I wish I had plans for a chocolate paradise vacation getaway this summer, but a skillet brownie is all I have in my future, at the moment! I'm not complaining (too much) though, since chocolate is one fantastic reward for a year of college drudgery! (Or maybe I'm just trying to make myself believe that!) Regardless, this is one delicious gluten-free cast iron skillet brownie to enjoy by yourself...or with a friend! There's something even more cozy about sharing it with someone you love. Unless your one true love is chocolate. Then you may just want the entire 6.5 inch brownie yourself and that is 100% okay with me!

Ingredients

Scale
  • 1 Ripe Banana (½ Cup, mashed)*
  • ¼ Cup Teff Flour
  • ¼ Cup Unsweetened Cocoa Powder
  • 2 TB Dark Chocolate Chips
  • 1 Tsp Baking Powder
  • ¼ Cup Unsweetened Non-Dairy Milk
  • 2 TB Cocoa Stevia Syrup
  • ¼ Tsp Pure Madagascar Bourbon Vanilla Extract
  • Optional Toppings:
  • Dark Chocolate Chips
  • Vegan Ice Cream
  • Rice Whip
  • Homemade Marshmallow Fluff

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, mix together all the brownie ingredients until you have a smooth batter.
  3. Grease a 6.5 inch cast iron skillet and pour in the mixed brownie batter.
  4. Bake the brownie in the oven for 12-14 minutes.
  5. Remove and top with any additional toppings you'd like before devouring!

Notes

*You can use ½ Cup Unsweetened Applesauce too!

    Congrats on finishing year 3!! Definitely worth celebrating with a double chocolate brownie! Cast iron skillets are the best. Growing up, I always wondered why my mom didn't own any other pans besides cast iron! I think we should all have one dedicated to dessert making! 🙂 I have big plans this summer! A trip to Spain and a move cross country to Arizona! I'll need a big brownie after that!

    Oh my, that does sound like a chocolate pool of YUM. So good! I'm not usually a brownie fan, but I think I might have to (AKA definitely need to) convince my sister to try making this one day. You know, because she is a much more experienced baker than I am. It sounds too good to pass up!

    This brownie looks so delicious and fudgy! I only have a couple of tiny cast iron pans which I use for photos only. I used to have a grill cast iron pan years ago but I could never figure out how to clean it properly and it rusted.
