We're skipping the Italian this time and instead, going south! Cajun flavors are still always a welcome addition to a meal. There's nothing I love more than just throwing together an entire pasta dinner all in one pot, super quick, and super easy. There's always time to fed out families something they'll love that's also quick and healthy. We're bringing the flavor and the nourishment today!

Pasta is always a quick go-to for busy families. When we need it gluten-free, sometimes we get stuck and raise our hands up in dinner defeat! What do we make that will replace our beloved pasta dinners? Just make pasta (gluten-free) again! That's not the only problem I hear, though. Sometimes...after many years of pasta and noodles galore, we can get sick of our marinara sauce and carbs. Again, don't worry! We're about to make it fun again!

We're talking a meatless gluten-free, allergy-free, and vegan dinner that's full of good old Southern okra, bell peppers, fire-roasted tomatoes, and all the flavors of Cajun food you love! There's no excuses for soggy bland pasta anymore! Everyone will be running to the dinner table once they smell this meal cooking up! The heat level of the dish is all up to you too! If you have little ones to feed, reduce the spice, if your family LOVES some heat, bring it on!

Ingredients

Scale
  • 1 8oz Box Gluten-Free Penne
  • 1 15oz Can No-Salt Added Diced Fire-Roasted Tomatoes
  • 3 Cups Chopped Bell Peppers
  • 1 Cup Sliced Okra
  • 1 Tsp Minced Garlic
  • 1 Tsp Onion Powder
  • 1 Tsp Dried Marjoram
  • 1 Tsp Dried Thyme
  • ½ Tsp Cumin
  • ½ Tsp Smoked Paprika
  • ½ Tsp Fennel Seeds
  • ½ Tsp Dried Oregano
  • ½ Tsp Dried Basil
  • ¼ Tsp Cayenne (or more)

Instructions

  1. Cook the pasta according to package directions, drain, rinse, and add back to the pot.
  2. Add all other ingredients to the pot of cooked pasta and stir and leave covered over a low simmer for 10 minutes or until the veggies soften.

    I'm always wondering what to make with okra, I wanna take the plunge and try cooking with it at home but for some reason always shy away from it. I definitely like the use in this pasta dish. YUM.

    This looks Yum! My little man loves his pasta, so I'm always on the look out for new and interesting dishes to try! His favourite (and daily staple if he had his way) is spinach pasta with green pesto, ham and raisins. Easy to make, ready to eat in 15 minutes, and allergy-friendly for him (dairy and egg free). Win Win!

    Although we don't have any diet restrictions in our house, I often cook with GF pasta. We really like it, and we feel better eating it. This dish sounds easy, but I will admit I would replace the okra. Love the one pot, easy weeknight options.
