June’s Theme – Pie Love: Tucked in a crust, nothing says love from the oven like pie. Whether it’s a twist on the all-American apple pie or a traditional recipe from your home country, give a healthy makeover to your favorite savory or sweet pie recipe.

Ah, you see, I'm not really a "pie" person. Okay, I'm not really a dessert person, but we can discuss that some other time. I will always welcome my crustless pumpkin pie (more of a breakfast really...just pumpkin, flour, etc.), but you know, pies really aren't my thing. So when I saw this month's Recipe ReDux theme, I took "pie love" to be "PIZZA pie love!" Because I do love my pizzas! One of the first things I made when I got home from school was one of my pizzas! It had been months and I was in need! Pizza will always warm my soul, non-traditional pizza that is!

I wasn't really sure what take I wanted to go with on this pizza creation, but I knew I wanted olives and peppers involved. Then I know I wanted some sort of "cashew cheese," and decided a "feta" version may be the answer. Thus, this Mediterranean pizza came to fruition and once I get a recipe idea in my head, it must be made! Have you ever eaten a roasted cucumber? Well you will if you make this pizza and they were great! It wasn't roasted a lot, as this pizza doesn't cook long, but the slight oven heat made they taste divine!

Maybe that's because no veggie can taste bad roasted. Am I right? The oven just does something so magical to them! You get the added bonus of wonderful smells too, but that's with baking or roasting anything! So dessert pie or pizza pie, you're nose and belly will be happy either way 😉 And olives! I love olives on pizza! Whenever my mom used to make pizza for herself, she would use Kalamata olives and they would smell SO bad in the oven....but really once you get past that, any olive on pizza TASTES amazing! (It's like the brownie thing!) I digress, this pizza is delicious, smells and all! Plus it has cashew "feta" which always makes everything better 😉

Ingredients

Scale
  • 1 Gluten-Free Brown Rice Tortilla
  • 2 TB Tomato Paste (no-salt added)
  • ¼ Tsp Minced Garlic
  • ½ Tsp Dried Basil
  • ¼ Tsp Dried Marjoram
  • ¼ Tsp Dried Oregano
  • Dash of Black Pepper
  • Squirt of Lemon Juice
  • 5 Sliced Marinated Mixed Olives
  • A Few Slices of Red Onion
  • 5 Slices of Cucumber
  • A Few Strips of Mixed Bell Peppers (I used green and yellow)
  • 2 TB Raw Unsalted Cashews (soaked for a few hours and then roughly chopped to make "feta" texture)

Instructions

  1. Preheat the oven to 415°F.
  2. Line a baking sheet with parchment paper. Place your tortilla (from frozen) down on the sheet.
  3. Assemble the sauce in a bowl, which includes the tomato paste and all the spices and lemon juice. Mix and then spread on the tortilla, leaving an edge crust.
  4. Next add the cucumber, olives, peppers, onions, and chopped cashews.
  5. Bake the pizza in the oven for 12 minutes. Remove and serve!

Mmm, pizza bliss! I just love making my single-serve pies. So easy and so customizable! No worries about getting a topping everyone wants! Everyone can just have their own! When I was younger and we would get pizza for dinner, we would always get half one topping, half another. Of two pies when it was all 4 of us able to eat real pizza. Everyone loved all the toppings though, except mushrooms. My mom was the only one to like mushrooms! But that was WAY before I fell in love with mushrooms and now I would totally devour a mushroom pizza! We all always loved onion pizza. These great thin slices of onion....perfect! Good times!

    OK - pizza is hands down my fav food. I thought I wouldn't really get to eat it after going gluten-free, but I tried making tortilla pizzas one day and I've been doing it ever since. So good! And so much healthier.

    Hi Rebecca! I hope all is well. I really love making individual pizzas too. Everyone can have what they want and that includes me. My pizza choice always includes lots of veggies...........and olives. I think I'm the only one in my family of 6 who really likes olives. I'm looking forward to the grilled cucumber. That will be new to me. And by the way..............I've never seen a recipe call for a 415 degree oven. Something new. Something different. I love it!

    Pizza pie is definitely the way to go if you don't like sweet pies! I love pie, it's probably one of my favorite kinds of desserts, especially fruit ones. I hardly ever make them though because crust can be such a pain in the a -_-

    I'm probably not in the norm here, but I've never liked olives! 😡 I'm excited about the cashew "feta" though, because I'm not a fan of regular feta! This is the perfect alternative! 😀

      I've always loved good old black olives. The one type I know I don't care for are GREEN...ugh!
      I've never even had real feta (and never will), but this is amazing and I can bet 5000000x better 😉

    Yay I love that we both went the savoury route with pizza! Pizza is totally a pie. I love pizza. I love proper dessert pie, too, but PIZZAAAA. Love the mediterranean toppings! My favourite pizza is definitely classic tomato sauce, but sometimes I like to mix it up with a white mushroom pizza topped with an egg. Kale and sweet potato are good toppings too!

    I love cashews and I used to love feta, so double thumbs up for cashew feta! I do pizza sauce the same super-quick way you do: paste + seasonings. Someone recently asked me for a tomato sauce recipe and I was like um...buy a can of sauce and season it with Italian seasoning! haha Nothing fancy here 😉

    And even though you can probably already guess my answer: DESSERT PIES!!!!!!

      I know right! Hahaha! All my pizza recipe just use the paste so it's super tomatoey and I can use a little since it's a personal pizza!
      Shoulda made a dessert pie in a cast iron 😉

    Roasted veggies are the best! I love that you used them on this pizza. I can't get enough of mediterranean flavours at the moment and they're of course perfect for this recipe - what a delicious and healthy dish! It looks incredible! Just my kind of recipe - that base looks so amazing too, I love using wraps!

    This is such a simple and delicious looking meal! Mediterranean flavors are my absolute favorite. Also, I love the idea of using soaked and chopped cashews for the feta - genius!

    Loving anything Mediterranean, including this pizza! So easy but delicious. Cashew cheese is one of my many obsessions. I'm not a huge pie person either, only on special occasions.

    I'm usually a pizza traditionalist, even in my vegan versions, but I love the idea of adding cashews. Though I'd have to skip the green pepper. So NOT a fan 🙂

    cashews - yum!!! i do make pizza with non traditional crust using naan bread or flat bread but this is also a wonderful idea!

    I will overlook the fact that you are not a dessert person as that crustless pumpkin pie was pretty epic! And - as far as pizzas go - dang - cashews on one is such a great flavor and textural contrast! Love it!

    Ooooh I love adding cashews to a pizza, great idea!!!! Very clever! I would need about 6 of these to fill me up, so think I will be tripling the recipe haha, but love the combination of flavors, veggie pizzas are amazing!

This distinction matters because:

👉 The only treatment is a strict, lifelong gluten-free diet
