Summer is all about pasta salads, potato salads, and coleslaws. Of course we all love the grilled main events, but the cold delicious side dishes tend to steal the most room on the paper plate! Macaroni salads are no exception, especially when they are super simple and easy, with a dose of health. This gluten-free and vegan macaroni salad includes summer sweet corn, crunchy celery, fresh dill, and a perfect dose of vegan mayo!
I was craving a new pasta salad recipe (every summer season requires a new one…or two) and I also wanted some corn; well, this is what came out of that! I’m always surprised when I open a new jar of vegan mayo (I use Trader Joe’s brand), and it smells like the “real deal”. I have to question it, look at the ingredients again, and make sure I didn’t pick up the wrong thing! Nope! It’s just that “faux-real”.
A good macaroni salad should be simple, not heavy, and have a mix of textures. Keeping things super simple, the three major players here are our gluten-free macaroni noodles, celery, and corn. Everything is highlighted by fresh dill (which I love), a shallot, a pinch of black pepper, and of course the vinegary, creamy, egg-free, soy-free, mayo! Not going to lie though, if you don’t feel like buying fresh corn, this is my “fresh cut” standby.
I know a good pasta salad (macaroni salad) when I see one and this summer corn macaroni salad is going to steal the pasta salad show at your next cookout, bbq, potluck, or whatever you call your summer outdoor gatherings! A picnic, perhaps? Picnics require macaroni salads (at least I think). I’ve only ever had an “indoor” picnic as a kid (since who doesn’t love sitting on the living room floor eating finger foods?) Indoor is just as good as outdoor, right? I mean, the food is all that matters, eh?
Simple Summer Corn Macaroni Salad
- Cook macaroni according to directions (about 7-8 minutes), drain, and add back to pot.
- Add in the rest of the ingredients to the cooked macaroni and mix well to coast and combine.
- Refrigerate to serve chilled.
